There are a lot of coconut macaroon recipes out there, and usually they call for egg whites or sweetened condensed milk. While I usually have egg whites on hand (thanks to my yolky coffees), this recipe is actually a redo of one I came up with before the GAPS diet healed my egg allergy. So I’m keeping this recipe egg-free. And to make these paleo of course I’m not gonna use a can of sweetened condensed milk….

So anyway, I switch out coconut milk and tapioca powder for the egg whites and sweetened condensed milk. And it works lovely-ly!

Easy Paleo Coconut Macaroons

Coconut. I use Azure Standard’s organic medium shredded coconut for this recipe. If you have another brand you love – go for it! You don’t have to use medium shred, either. That’s just what I usually have on hand for my husband’s granola. I think fine shred is technically for macaroons. But do whatever.

Milk. Coconut milk is what I used for these easy paleo coconut macaroons. I like to make my own, but you can use store bought. I like Thai Kitchen at Walmart or Amazon or Native Forest.

Sweetener. I use honey to sweetened these, but I think maple syrup would be lovely, too. Actually, I don’t think a liquid sweetener is necessary, so if you can do coconut sugar or date sugar, those would probably work well, too.

Thickener. In place of the sweetened condensed milk a lot of macaroon recipes have, I used a little tapioca powder to thicken up the dough. I have also used arrowroot powder in place of the tapioca and that works fine. I’m sure potato starch would work, too.

To Drizzle or Not to Drizzle

My first iteration of these easy paleo coconut macaroons was covered with a chocolate drizzle. Because why not? Everything is better with chocolate on top of it! But I actually really do like these macaroons just the way they are – chocolate-free – as well! So if you’re not team chocolate, or you don’t have the ingredients for the drizzle, please make the macaroons anyway! They are so delicious.

And if you need chocolate on top, the chocolate glaze recipe in the card below is super easy. Of course, if you want, you can always just use melted chocolate bars or chocolate chips. Whatever floats your boat.

Easy Paleo Coconut Macaroons

Free from grain, gluten, eggs, and dairy.

Ingredients

Optional chocolate drizzle:

Instructions

Preheat the oven to 350F and line a cookie sheet with parchment (or grease it).

In a small saucepan, whisk milk, honey, and salt together over medium heat until combined.

Whisk in the tapioca/arrowroot and stir frequently until boiling and thickened.

Remove from heat and stir in the shredded coconut and vanilla.

Drop dough by heaping tablespoonfuls onto prepared cookie sheet.

Bake for 10 minutes, or until golden brown.

Eat as is, or cool, then add the chocolate drizzle.

To make chocolate drizzle, whisk all ingredients in a bowl until smooth.

If the coconut oil is too solid, heat it up a little in a small saucepan until you can whisk it.
