With only a few ingredients and a little time, you can satisfy your chocolate cravings in a healthy way! These extra-dark chocolate raw tahini truffles are the perfect dairy-free and refined sugar-free treat!

Raw tahini truffles.

Tahini. Made from roasted, pureed sesame seeds, tahini is basically just like peanut butter made from sesame. You can purchase tahini from most grocery stores, or you can make it pretty easily. I’ve included those instructions below. If you don’t want to use or make tahini, you can substitute peanut butter or almond butter for the tahini.

Sweetener. These raw tahini truffles work well with a liquid sweetener, and I love to use honey for that! I think maple syrup would be tasty, too, but it might change the texture.

Cocoa. Since the cocoa flavor is very prominent in these truffles, you’ll want to use a good quality cocoa powder. I love Azure Standard’s fair-trade, organic cocoa, but if you have another brand you like you can feel free to use whatever.

Vanilla. There is not a lot of vanilla in this recipe, but it does help to balance the cocoa. I either make my own vanilla or use Azure Standard’s. You can leave this out, if you want, or substitute a chocolate extract or a coffee extract.

How to make your own tahini.

Tahini is super easy to make. Though generally it uses roasted or toasted sesame seeds, I like to just use them raw. If you want to toast yours first, just put them in a pan over medium-low heat and stir until they’re browned and fragrant.

Pour about a cup of sesame seeds into a blender or food processor and pulse, adding just enough olive oil to make a paste.

I love Azure Standard’s organic white sesame seeds, they’re delicious!

Raw Tahini Truffles

Free from grain, gluten, eggs, dairy, and refined sugar.

Ingredients

Instructions

In a freezer-safe bowl, mix all the ingredients until the form a smooth paste.

Stick the bowl in the freezer for 5-10 minutes until it starts to get firm.

With a spoon, scoop out a tablespoon of the batter and roll it into a ball.

Dust with cocoa powder and place on a plate.

Repeat with remaining batter.

Stick truffles in the fridge or freezer to firm up again.
