Honey-Sweetened Chocolate Peanut Bars

Coconut oil. What holds this treat together is the fat. Coconut oil is a healthy, dairy-free option, and my go-to for making homemade chocolate. If you can handle dairy, you can use half coconut oil and half butter for the fat in this recipe. The butter will lend a softer end result. But be aware that you do need at least half of the fat to be coconut oil because it solidifies properly to hold the shape needed for the chocolate peanut bars.

Cocoa powder. Of course it wouldn’t be chocolate without cocoa powder! I love to use organic, fair-trade cocoa powder from Azure Standard, but you can use whatever kind you like. You could probably even use carob powder, if you like. I haven’t tried that yet, though.

Sweetener. Seeing as these are honey-sweetened chocolate peanut bars, I do use honey to sweeten them! If you want, you can use other liquid sweeteners, too. Maple syrup would be delicious, and agave would work, as well. I have not tried any low-carb sweeteners like stevia, so I would not suggest using that unless you are experienced in working with it.

Peanuts. Plain peanuts is what you want here. Roasted or not, salted or un-, it doesn’t really matter. I like to use organic peanuts (these from Azure Standard are my favorite!), but you can just use whatever kind you usually buy. You can even use a mixture of nuts if you want. Almonds, pecans, walnuts… they will all taste delicious. Just be aware that these bars do get frozen to set, and whole frozen nuts can be very hard to eat!

Extras. As with any chocolate treat, my favorite extra ingredients are salt and vanilla extract. They are totally optional, though. If your peanuts are salted you do not need to add in any extra salt. For a fun version, you can even add in pumpkin seeds and craisins!

Free from grain, gluten, eggs, dairy, and refined sugar.

Ingredients

Instructions

In a small saucepan, add coconut oil, butter, cocoa, honey, salt, and vanilla.

Whisk or stir gently over medium-low heat until fat is melted and everything is combined smoothly.

Add in peanuts and stir until evenly coated with chocolate.

Pour into freezer-safe container (I used this stainless food container) or spread over a parchment-lined plate.

Freeze until set (about 1/2 hour), then cut into chunks and store in the fridge.
