Paleo Chai Chia Pudding

Chia seeds. Packed with anti-oxidants, ALA omega 3 fatty acids, fiber, and protein, chia seeds can be a powerhouse of goodness. Of course, like most others seeds, legumes, and grains, they need to be soaked for us to get the most nutrition out of them. Soaking disables the phytic acid in chia seeds, which is sort of like their protective shield to keep all the goodness locked inside. Since chia pudding is usually made by soaking the chia seeds for a few hours (or overnight), it’s a great way to get all the nutritional benefits of chia seeds.

Milk. I usually use fresh goats milk for my chia puddings. Since I can handle dairy ok, it is a good source of nutrition for me. Of course, you can use whatever milk suits your dietary needs. I’ve used full-fat coconut milk, or my homemade coconut milk, as well.

Black tea. For the tea in this paleo chai chia pudding, I like to use loose-leaf black tea. Just make a cup of it, add the spices, then strain the leaves when making the pudding. For those of you who just like using tea bags, I have that linked in the recipe card below, along with the directions. You can use either, it’s just as yummy however you make it.

Spices. Of course it wouldn’t be chai without some delicious, warming spices! (Well, technically it would be, since chai just means tea, but anyway…) I love steeping my black tea with some cinnamon, ginger, cardamom, and a little black pepper. If you have a favorite chai spice blend, you can just use that here instead. But I usually have all the spices on hand, so I just make up my own mix.

Sweetener. As always, I like to use honey as my sweetener. But this paleo chai chia pudding is delicious with maple syrup to sweeten it!

Paleo Chai Chia Pudding

Free from gluten, grain, dairy, eggs and refined sugar.

Ingredients

Instructions

In pint-sized mason jar or mug, combine spices, sugar, and black tea bag.

Pour boiling water over and mix gently to combine.

Cover and steep for about 10 minutes.

Cool to room temperature, then add in the chia seeds and milk.

Cover and refrigerate until set (2-3 hours, or overnight).

For optional deliciousness, shave some homemade chocolate on top!
