Too hot to bake? No worries! You can still enjoy a treat with these grain-free no-bake chocolate peanut butter bars!
The inspiration for these grain-free no-bake chocolate peanut butter bars came from my Instagram “friend” Natalie at Rooted In Truth Families. Her recipe is simple and perfect for a summer treat! But sadly it uses wheat flour and chocolate chips. One which I can’t have, and the other which I never have on hand unless I make them. So I decided to make my own celiac-friendly version!

Grain-free no-bake chocolate peanut butter bars.
Oil. I have used both coconut oil and butter for the oil in this recipe. And sometimes I use a mixture of both. Coconut oil gives a firmer texture, but it also melts faster once you have it out of the fridge.
Sweetener. There are many different sweeteners you could use for these chocolate peanut butter bars. I usually use honey, because I love the nutrition it gives and I usually have it on hand. But maple syrup would also be delicious! Natalie’s original recipe uses a little of each. You can also use a granulated organic sugar, if you need to.
Peanuts. I love using Azure Standard’s organic roasted peanuts for this recipe! Their flavor is incredible and of course there are no weird ingredients when you’re just using plain peanuts. If you want to use peanut butter, you can easily make your own (recipe here) or of course use whatever you have on hand.
Cocoa. If you want to use chocolate chips, like Natalie does in her recipe, you can totally use that. If you want to make your own, like I usually do, that recipe is here. For this recipe I basically use my homemade chocolate chip recipe, but mix it up *in* this chocolate peanut butter bar recipe.
Flour. For the flour I use almond flour. It gives the best texture in a frozen treat. I have tried using other flours, like coconut and cassava, and they are ok. Coconut flour tends to be too crumbly, and cassava too dense. If you want to use a mixture of all three, that should work as long as you use mostly almond flour.

Grain-Free No-Bake Chocolate Peanut Butter Bars

Ingredients
Chocolate layer:
- 1/2 cup coconut oil or butter
- 1/4 cup honey
- 1/2 cup cocoa powder
- 1 teaspoon vanilla
- 1/4 teaspoon sea salt
Peanut butter layer:
- 1/2 cup coconut oil or butter
- 3/4 cup almond flour
- 1 cup peanut butter (or plain peanuts for a crunchier filling)
- 1/4 cup honey
Instructions
Line a 9×9 inch baking dish with parchment paper and set aside.
Chocolate layer:
In a small saucepan, whisk together ingredients for the chocolate layer over low heat until melted and smooth.
Pour half of chocolate layer into prepared pan.
Peanut butter layer:
In a small bowl, combine the peanut butter layer ingredients until smooth.
If using plain peanuts, add all peanut butter layer ingredients to a food processor and blend till smooth.
Pour peanut butter layer over bottom chocolate layer.
Chocolate layer:
Pour remaining chocolate layer over the peanut butter layer.
Using a knife or spoon, swirl the top chocolate layer and the peanut butter together.
Place in fridge to chill until set.
Cut into squares and serve.
Store leftovers in the fridge.
