There’s no wrong time of year to indulge in this easy and delicious grain-free strawberry shortcake! It’s a favorite treat in my household.
Strawberry shortcake has long been one of my favorite summer-time desserts. Living down in the south, strawberries are fairly cheap in the summer months, and I like to take full advantage of that fact. Ice cream, fruit snacks, and granola are a few of my favorite ways to use up the summer’s strawberry bounty. And as many reasons to eat strawberry shortcake as possible.
This year when I made up a batch of strawberry shortcake, my daughter asked me to make it into a trifle, and this gorgeous grain-free strawberry shortcake trifle was born!

Easy Grain-Free Strawberry Shortcake
Strawberries. Strawberries are high in manganese, which is needed for proper nervous system development and brain health. They also contain vitamins A and C and many amino acids and antioxidants. The flavonols and quercetin contained in strawberries help your body fight inflammation and chronic disease development. On top of all that healthy stuff, they just taste plain delicious!
Flours. For the shortcake biscuits I use a little almond flour, cassava flour, and coconut flour. You can use a different grain-free starch in place of the cassava flour, if you need to. Potato starch, tapioca starch, or arrowroot powder will all work just fine.
Sweeteners. I add a little sweetener to the shortcake, but you don’t really have to. Just a little bit of coconut sugar or honey is enough. I have two tablespoons in the recipe card, but you can use less, or not any at all! I also use a little honey in my homemade whipped cream recipe. You can use maple syrup instead, or any other liquid sweetener. I wouldn’t use a granulated one for the whipped cream, as it will change the texture.
Butter. I think the shortcake biscuits taste best when they’re made with butter! But I have also made them with coconut oil and olive oil as a substitute, and those work fine, as well. Just know that the end product will be more crumbly if you use an oil instead of the butter. Ghee is another option, but I haven’t tried it.
Cream. I absolutely love making my own whipping cream for this grain-free strawberry shortcake. It’s the best! It’s so easy to make, 100% healthier than store-bought pre-made stuff, and I think it tastes better, too. If you need to make this recipe dairy-free, you can use my homemade coconut whipped cream recipe.

How to make a Strawberry Shortcake Trifle.
While strawberry shortcake is a delicious dessert, you can easily make it into a strawberry shortcake trifle!
After your biscuits come off the pan, break them into 1-inch chunks and arrange a layer on the bottom of a 2-quart casserole dish. (If you have a fancy trifle dish, you can use that instead.)
Whip up your whipped cream and add a layer of that on top of the biscuits. Top this with a layer of sliced strawberries.
Repeat layers until your dish is filled, making sure to top it off with strawberries.

Options.
You could also eat it with different fruits, like blueberries or peaches. They’re both delicious options!
And lastly, you can make it a chocolate strawberry shortcake trifle by adding a tablespoon of cocoa powder to the whipped cream and upping the honey to two tablespoons.

This shortcake recipe is so easy and delicious! I followed your recipe with almond milk and used scant 3 tbsp allulose instead of coconut sugar. I did not make the whipped cream. Thanks for sharing your recipe!
