With only a few ingredients, you’ll have this easy cassava flour matzo whipped up in no time! They’re the perfect grain-free matzo for Passover, or just an easy snack.

While I use these cassava flour matzo for our yearly Passover meal, they actually are easy enough that I use them for other things too. They are fun little wraps for lunch, or just an easy snack for the kids to make. And the kids love helping to roll them out.
They’re very soft and moldable when they come off the skillet, but they do tent to harden after sitting for a day. If you have leftevors, store them in an air-tight container so that they don’t become too hard.

Cassava Flour Matzo
Flours. While there are many recipes out there for grain-free matzo, or flat breads, that use coconut or almond flours, I like to use mostly cassava flour for this recipe. It holds together well without eggs, as opposed to coconut flour. And I really do not like the taste of almond flour that much, so I only use a little bit here, for texture.
If you would like make a matzo with something other than cassava flour, check out the options in my paleo Passover post.
Oil. You can use pretty much whatever oil you want for these cassava flour matzos. I like the subtle flavor olive oil gives, but you can use melted coconut oil, avocado oil, butter, ghee, etc.
Liquid. I use water for the liquid here, but you can use a dairy-free milk, or regular milk, if you want.
