Decadent and rich, this dark flourless chocolate cake with caramel glaze is perfect for a quick and easy dessert.
With only a few ingredients, and a short cook-time, this dark flourless chocolate cake is just what you need to fill your chocolate craving. You can eat it without the caramel glaze for a super-rich chocolatey treat, or add the caramel for a little added sweetness.

Dark Flourless Chocolate Cake
Butter. Butter is a huge part of this flourless chocolate cake. I have not tried to substitute coconut oil yet, so if you do and it works, please let me know.
Sweeteners. I use coconut sugar for the sweetener here, along with a little molasses. The molasses helps give a little depth of flavor to the cake. You could probably use honey or maple syrup, or just leave the molasses out all together, if you need to. As for the coconut sugar, any kind of granulated sugar would probably work just fine. I haven’t tried any keto sweeteners, though.
Cocoa. In order to make this a dark flourless chocolate cake, you need a lot of cocoa in opposition to the sweetener! I like to use a good quality cocoa powder, like Azure Standard’s fair-trade, organic cocoa. But pretty much any cocoa you love will work just fine! Aldi’s or Anthony’s on Amazon are both good, too. And if you want your dark flourless chocolate cake to be extra dark, just use less sweetener.
Eggs. I have not tried to make this egg-free. I do not think the texture or flavor would be the same with any egg-subs like flax or chia. I am not sure about something like pumpkin, it may work, but the cake would not stay together as well. Feel free to try that, though.
Coffee. A little strongly brewed organic coffee in this dark flourless chocolate cake helps give it an even deeper flavor. You do not have to use coffee though. You could use some herbal tea or some milk, or even just water.

Dark Flourless Chocolate Cake with Caramel Glaze
Free from grain and gluten.
Ingredients
For the dark flourless chocolate cake:
- 1 cup butter (divided)
- 1 tablespoon molasses
- 2/3 cup coconut sugar
- 1 teaspoon vanilla
- 1 cup cocoa powder
- 1/4 teaspoon sea salt
- 3 eggs
- 1/4 cup strong organic coffee
For the caramel glaze:
- 1/2 cup coconut sugar
- 2 tablespoons butter
- 1/4 cup milk of choice
- 1/4 teaspoon sea salt
Instructions
For the dark flourless chocolate cake:
Preheat oven to 350 and grease an 8×8 inch baking dish (either square or a round cake pan is fine).
In a small saucepan, over medium-low heat, melt half of the butter along with the molasses.
When melted, stir in sugar, vanilla, cocoa, salt, and remaining butter. Stir until second batch of butter is melted in completely. Cutting this section of the butter into tablespoon-sized chunks will help it melt in better.
In separate bowl, whisk eggs.
Whisk in the coffee.
Pour chocolate mixture, whisking constantly while pouring.
Whisk until smooth, then pour into prepared pan.
Bake for 25 minutes.
For the caramel glaze:
In the same saucepan, melt the caramel glaze ingredients over medium-low heat.
Once melted, continue to stir for 10-15 minutes, until smooth and no grainy texture remains.
Pour over dark flourless chocolate cake.
Serve warm, or cool and refrigerate (it tastes delicious chilled!).
