This recipe was born out of my desire to eat a coconut pie, and my dissatisfaction with said pie once I ate it. Even though coconut pie is technically good, it’s just so…. boring. So I brain-stormed with my 17-year old and we decided that the perfect things to fix the pie were chopped pecans and chocolate chips. And of course the next logical step was to drizzle it with caramel sauce. And so this grain-free coconut turtle pie was born.

And no, it doesn’t have any turtles in it.

Grain-Free Coconut Turtle Pie

Coconut. Yes. This coconut pie is full of coconut. If you cannot have coconut, please find another pie. There is no substitution! Sorry… I use unsweetened, medium shredded organic coconut for this pie. I usually get it on Azure Standard, but whatever size you got should work, just please don’t use sweetened coconut. Cause nobody needs that.

Eggs. There are four eggs in this recipe. I have made it with only two, and it didn’t really hold together very well, so keep that in mind if you’re trying to skimp on the egg quantity. I have not tried to use any egg replacers in this recipe. I don’t really think they would work, though.

Sweetener. I use coconut sugar to sweeten this coconut turtle pie. And not just to keep things coconut-y. Just because I like coconut sugar and my body handles it well. It helps give the pie a sort of caramel-y flavor (even though there’s caramel sauce on top). You could use date sugar instead. I haven’t tried a liquid sweetener, but I think maple syrup or honey would probably work just fine, though they may change the texture of the pie a little.

Butter. If you absolutely cannot have butter, you can use coconut oil instead. It’s fine. Maybe use a tad less than the amount called for, if you’re opting for coconut oil, as it tends to be a little more liquidy than butter when you melt it.

Pecans. Yes, pecans. Thus 1/3rd of the “turtle” part of the name of the pie. (The other parts being chocolate and caramel.) If you absolutely have to, you could probably use walnuts instead, or maybe even almond, though that may render more of an “almond joy” pie instead of a turtle one. You do you. I won’t judge.

Chocolate. I will admit, I used regular old, completely unhealthy chocolate chips from Aldi in this pie. I blame my daughter. Usually, I like to use my homemade, honey-sweetened chocolate chunks for baking. They’re easy to make and a much healthier option.

Caramel. I also use my own homemade caramel sauce for the topping of this grain-free coconut turtle pie. I have a super, duper easy recipe here, if you want to make your own, too. Otherwise, just use whatever, or don’t use any caramel at all! My 6-year old insists that caramel is disgusting and made me serve him a piece of the pie before I put the caramel sauce on. But he was definitely missing out…

Grain-Free Coconut Turtle Pie

Free from grain and gluten, with dairy-free option.

Ingredients

Instructions

Preheat oven to 350 and grease a 9-inch pie plate well.

Beat the eggs, sugar, and butter until smooth and fluffy.

Add remaining ingredients and pour into prepared pie plate.

Bake for 30 minutes, or until set in the center and golden.

Cool for about 10 minutes, then drizzle with caramel sauce.
