Just like that traditional “Christmas crack,” but so easy and kosher! This gluten-free no-bake matzo crack is sure to be a favorite during the holidays!

Gluten-Free No-Bake Matzo Crack
Matzo. We usually get Manischewitz gluten-free matzo squares for Passover, so that’s what I use for this recipe. Of course, those aren’t always available in the store, so when they’re not I make my own simple almond flour crackers (recipe included below). You can pretty much use whatever cracker you want for this no-bake matzo crack. If you go the route of making your own almond flour crackers, the term no-bake kinda goes out the window, but you still won’t have to bake the matzo crack when assembling it.
Toffee. This part of the matzo crack is basically just my homemade toffee recipe. In fact, I came up with my toffee recipe so that I could make “christmas” crack with my leftover matzo from Passover last year. Anyway….
This toffee is super easy to make with just a little coconut sugar, honey, and butter. I haven’t tried it with coconut oil instead of butter. Someday I will get around to that. If you’ve tried it please let me know how it works.
Chocolate. The chocolate layer is equally as easy. It’s basically just coconut oil, honey, and cocoa powder with a little vanilla and sea salt for finishing touches.
I like to use Azure Standard’s fair-trade, organic cocoa powder, but please feel free to use whatever kind you like. Aldi’s is good, and Anthony’s on Amazon. Since you don’t have to bring the honey to a high temperature, I like to use raw honey so that this matzo crack has more nutrients. I also like to use expeller-pressed organic coconut oil so my chocolate layer doesn’t taste like coconut.

Gluten-Free No-Bake Matzo Crack
Free from gluten, with grain-free and egg-free option.
Ingredients
For the matzo:
- 3 sheets gluten-free matzo
or….
- 2 cups almond flour
- 2 tablespoons flax meal
- 6 tablespoons water
For the toffee layer:
- 1/2 cup butter
- 1/4 cup honey
- 1/4 cup coconut sugar
For the chocolate layer:
- 1/4 cup coconut oil
- 1/4 cup honey
- 1/4 cup cocoa powder
- splash vanilla
- sea salt, for sprinkling
Instructions
Arrange matzo on a cookie sheet, filling it as close to the edge as possible. (If you’re making almond crackers, see instructions below.)
In a small saucepan, prepare toffee according to the recipe directions.
Quickly drizzle toffee over matzo and spread with a spatula to cover.
Place toffee covered matzo in the freezer for about 15 minutes, to set.
In same small saucepan, melt the coconut oil, honey, and cocoa powder until smooth.
Stir in vanilla.
Pour chocolate over toffee covered matzo.
Sprinkle with sea salt and return to the freezer to set.
Break into pieces and enjoy!
Optional almond flour crackers:
Preheat oven to 350 and line two cookie sheets with parchment paper.
Whisk together almond flour and flax meal.
Stir in water until a ball of dough forms.
Divide in half.
Grease a rolling pin and roll one piece of dough out onto each parchment lined cookie sheet.
Roll it about 1/8 inch thick.
Bake for 20 minutes.
