Move over marshmallows…
I’m al about the holiday food. Roasts, pies, cranberry sauces, mashed potatoes, stuffing, rolls…. I even love all the leftovers. One holiday dish I’ve never been able to get behind though, was sweet potato casserole.
Marshmallows and sweet potatoes, delicious as they may be by themselves, do not belong together. In fact, I might even go so far as to say that adding marshmallows on top of sweet potatoes will ruin both of them!
So I decided a healthy, marshmallow-free version was in order. This honey-sweetened dish is as much a crowd-pleaser as those traditional, sugar-filled ones. It’s lightly sweetened with honey, filled with spices, and topped with honey-sweetened, crispy nuts!
All the deliciousness of that holiday dish, fill the healthy of sweet potatoes, nuts, and honey.

Healthy Sweet Potato Casserole
Sweet potatoes. Sweet potatoes are a wonderful source of vitamins and minerals that your body needs to function well. They have vitamin A, vitamin C, and B vitamins 1, 2, and 6! Sweet potatoes are also a wonderful way to get potassium, niacin, manganese, copper, pantothenic acid, and phosphorus.
This recipe only takes 4 sweet potatoes, but you can double it if you’re serving a crowd. The sweet potatoes must be precooked for this recipe. I usually cook them up the day before and stick them in the fridge until I’m ready to assemble the rest of the recipe. You can bake them right before you make the sweet potato casserole, just know that they will be a little harder to peel when they’re fresh out of the oven.
Coconut milk. You do not have to use coconut milk in this recipe, or any milk, for that matter. You can just use water, or even chicken/veggie broth if you want a less sweet dish. Coffee would even be good, in my opinion…
Honey. Using honey as a sweetener give this healthy sweet potato casserole a nice light sweetness. You can use any kind of liquid sweetener you want (I shared a maple-sweetened version here), or even granulated coconut sugar would work fine.
Spices. It wouldn’t be a holiday dish without a good seasoning of cinnamon, ginger, nutmeg, and cloves! They are a stable flavor combo in my kitchen! If you’re not a ginger fan you can leave that out, but I encourage you to use it – ginger is amazing for your health!
Nuts. You can use whatever nuts you want for the topping. Walnuts, slivered almonds, pecans, cashews…. A mix of all would be delicious, too!

Healthy Sweet Potato Casserole

Ingredients
Filling:
- 4 medium-sized sweet potatoes cooked and peeled
- 1/2 cup coconut milk (or water)
- 2 eggs
- 1/4 cup honey
- 1 teaspoon vanilla
- 2 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon nutmeg
- 1/8 teaspoon cloves
- 1/2 teaspoon sea salt
Topping:
- 1 1/2 cups roughly chopped nuts of choice (walnuts, pecans, cashews, almonds, or a combo of all of them!)
- 1/4 cup firm coconut oil
- 3 tablespoons honey
Instructions
Preheat oven to 350F and grease a 8-10 inch cast iron skillet, casserole dish, or pie plate.
Roughly puree sweet potatoes with a fork or hand mixer until desired texture is reached (my family likes it super smooth).
Add in the remaining filling ingredients and mix well.
Pour and smooth into the prepared skillet.
In a bowl, cut in nuts with the coconut oil and honey until evenly mixed.
Sprinkle the crumble mixture over the sweet potatoes.
Bake for 25 minutes, or until the topping is browned.
