I made my first homemade caramel sauce a few years back, and ever since I’ve been hooked. It might sound like a complicated dessert, but it’s really so easy. I like to mix everything up in the blender and then melt it together in a small saucepan on the stove top. Of course, sometimes I skip the saucepan step and just use it as is. The texture may be a little more grainy, but that doesn’t dissuade me!

Some of my favorite caramel things are my iced yolky caramel macchiato and my pumpkin sponge cake with caramel glaze.

Chocolate Caramel Sauce

Sugar. While I usually use coconut sugar for my chocolate caramel sauce, I have used date sugar as well, and it works fine. I love that coconut sugar has much-needed minerals like nitrogen, phosphorus, potassium, choline, magnesium, and more. Date sugar is nutricious, as well, if you go that route. I usually get Azure Standard’s organic coconut sugar, but you can use whatever type you like. I generally stick with organic sugar, but you can use whatever! 

Cocoa. Azure Standard’s organic and fair-trade cocoa is my absolute favorite, and I use that whenever I can get it. But you can just use your favorite cocoa powder. Aldi has a good one, as well!

Milk. I usually use my fresh goat’s milk for my chocolate caramel sauce. I know that not everyone has that option, and that’s fine! I’ve used organic whole milk and coconut milk too, they both work just as well. When I began my homemade caramel days, I used organic heavy cream or full fat coconut cream. Somewhere along the way I switched to just using milk, and I haven’t noticed a big difference in the final product. If you can get your hands on raw dairy and can tolerate it, the cream from that would make a delicious caramel!

Extras. I just love salty caramel. There are only a few dashes in this chocolate caramel recipe, so I usually add more when I’m eating it! For salt, I use Celtic sea salt. I usually get it from Azure Standard or Amazon.

I also love to add in some good quality vanilla to my chocolate caramel sauce. It’s totally not necessary, but it adds a nice touch to the finished product. I love Azure Standard’s extract.

Chocolate Caramel Sauce

Free from grain, gluten, and eggs, with dairy-free option.

Ingredients

Instructions

In small saucepan, whisk everything together until combined.

Turn heat to medium-low and cook until sugar is dissolved, whisking frequently to prevent burning.

Pour into glass jar and let cool. Store in the fridge.

Optional:

Put everything into a blender and puree until smooth. The texture of the end product will be a little grainier, but it’s still delicious if you’re in a hurry!
