These no-bake German chocolate bars are like a little German chocolate cake that requires no oven and only a few minutes to make! German chocolate lovers rejoice!

This recipe came about when I was really craving German chocolate, but it was also a million degrees outside and I didn’t want to turn on my oven. I turned to my chocolate coconut bars for inspiration, and with the addition of some pecan flour I had lying around, these no-bake German chocolate bars were born! They’re very easy to whip up, and while they obviously don’t taste exactly like German chocolate cake, they’re good enough to fix a craving.

No-Bake German Chocolate Bars
Coconut oil. To hold the bars together, coconut oil is necessary. Without coconut oil these bars would just fall apart. I haven’t yet found an acceptable substitution, so if you can’t do coconut oil, I’m sorry. I usually buy Azure Standard’s organic expeller pressed coconut oil, and it doesn’t taste like coconuts, but if you want a little extra coconut flavor I’d use a virgin coconut oil like Island Fresh.
Sweetener. Honey is my go-to for sweeteners in my no-bake desserts (and pretty much anything else, too). If you can’t do honey, maple syrup would also be delicious, or even agave syrup (though I don’t recommend using this very often as it’s so processed).
For low-carb/keto options, you could try using a few drops of liquid stevia and upping the coconut oil content to take the place of the liquid you’re missing out on by not using honey.

Coconut. I use a medium shredded coconut for this recipe. But really, whatever kind of shredded coconut you use is fine. Just make sure it’s unsweetened.
Pecans. You can either use pecan flour, like I did, or you can use regular pecans that are chopped. The amount is the same, just pulse them in a food processor or chop with a knife until they’re about the same texture as the coconut.
You will be adding the shredded coconut and chopped pecans to a food processor and pulsing them together anyway, so the beginning texture of the nuts doesn’t matter that much.
Cocoa powder. For the topping of these no-bake German chocolate bars, a good quality cocoa powder is a must! I like to use Azure Standard’s organic, fair-trade cocoa powder, but there are some other good ones you can get at a grocery store, too. In place of the chocolate topping, you could even just melt down some organic chocolate or some dairy-free chocolate chips and use that instead.

Ingredients
For the base layer:
- 1/3 cup softened coconut oil
- 1/3 cup honey
- 1 1/2 cups shredded coconut (unsweetened)
- 1/4 cup pecan flour (or finely chopped pecans)
- 1/2 teaspoon vanilla
- a dash sea salt
For the chocolate topping:
- 1/4 cup softened coconut oil
- 1/4 cup honey
- 1/3 cup cocoa powder
- 1/2 teaspoon vanilla
- a dash sea salt
Instructions
In a food processor or high powered blender, pulse all the base layer ingredients until well combined and smooth (not pureed).
Spread into parchment-lined 9×9 inch freezer-safe baking dish (or a loaf pan for deeper bars). Set in the freezer while you make the topping.
In a bowl, whisk together the chocolate topping ingredients until smooth. Spread over base layer and return to the freezer to set for at least 1/2 hour.
Remove from bars from pan and cut into squares.
Store in the freezer.
