I have been making these for a few years now, and every time they come out of the oven they just seem to disappear! Sometimes I fill them with chocolate chip cookies, sometime with nuts, sometimes I don’t put anything in them. I’ve even made a spiced version with cinnamon, cloves, and turmeric. They’re always delicious!

Once, for my son’s birthday, I made up this grain-free chocolate chip cookies recipe sans chocolate chips and baked it in a cake pan for the bottom of my easy ice cream cake. It was delicious.

Easy Grain-Free Chocolate Chip Cookies

Flours. I’ve tried a few different mixes for these grain-free chocolate chip cookies. My favorite is a combo of cassava flour, coconut flour, and almond flour. If you can’t do tree nuts, you can switch up the almond flour for more cassava flour. It will still be delicious!

I have not tried to make these with any normal gluten-free flours, or anything like tiger nut.

Eggs. Yes, this recipe uses a lot of eggs. And I even though I’ve tried the dough with fewer eggs, I just like end texture when I use 4 eggs the best. Because of the amount of coconut flour in the recipe you can’t really make these egg-free without them falling apart after baking. If you don’t mind that, though, and you need no eggs, feel free. Make these work for you!

Fat. I like to use coconut oil for my healthy fat in these chocolate chip cookies. It’s packed with nutrients and it’s not too pricey. I’ve also use olive oil and avocado oil, which are both great. If you use olive oil you can’t taste it, don’t worry. For oil-free I have tried applesauce and it doesn’t work the best end-texture-wise, but it’s still doable!

Sweetener. Honey for the win, my friends! I’ve use coconut sugar before and it works fine, though the end cookie texture is different. You could also use maple syrup. I have not tried a low-carb sweetener for these (cause they’re pretty high in carbs anyway! ha!) but you could try that if you need to.

Chocolate chips. I like to use my homemade chocolate chunks for this recipe (and most recipes that call for chocolate chips), but if you’ve got the money Lilly’s chocolate chips or Enjoy Life are also good options. Or you could just use normal chocolate chips if that works for you.

Cassava Flour Chocolate Chip Cookies

Free from gluten, grain, dairy, and refined sugar, with nut-free option.

Ingredients

Instructions

Preheat oven to 350.

In a bowl, whisk together eggs, softened coconut oil, honey, and vanilla.

When smooth, dump dry ingredients on top of wet ones and mix until combined.

Add chocolate chips and stir to mix.

Place spoonfuls of dough onto an ungreased cookie sheet. The cookies do not spread out much.

Bake at 350 for 12 minutes.
