I don’t know about you, but the hotter it gets, the less time I want to be spending in the kitchen making meals. And as soon as the warmer months come all my family starts asking for is homemade ice cream and popsicles. This easy homemade chocolate ice cream is our latest favorite. It only takes a few ingredients most moms always have on hand, and is healthy enough that I don’t feel badly serving my kiddos up a big bowl full!

Easy Homemade Chocolate Ice Cream

Milk. While you can technically use coconut milk to make this chocolate ice cream, I do like using raw milk the best. I have used both and whichever you use definitely make sure it has as much fat as possible! I have used my homemade coconut milk (it’s easy to make!), raw cow’s milk, and raw goat’s milk. Besides coconut milk, other dairy-free milks like almond milk don’t really work. You could definitely use it if you have to, but the ice cream will not be as creamy.

Cream. Just like with the milk, full-fat dairy works the best! I have used coconut cream, and that works really well, too. If you don’t have any cream on hand and you just really need to make this chocolate ice cream, you can just use more full-fat milk. It won’t be as fluffy, but it will still be delicious!

Cocoa. Like always, I use Azure Standard’s organic, fairy-trade cocoa powder. It’s hands down the best cocoa powder ever! But you can use whatever kind of cocoa powder you have or love. If you can’t have cocoa, or want a version that doesn’t have any caffeine, you can also use carob powder.

Honey. I pretty much always use honey to sweeten pretty much everything. Not only is it delicious, it has amazing health benefits! If you don’t or can’t have honey, maple syrup works deliciously as well, or you could use coconut sugar. Just be aware that coconut sugar might make the texture a little grainy. You could always melt a bit with a little of the milk and then cool it before making the chocolate ice cream.

Optional additions. To make this easy homemade chocolate ice cream more nutritious, add in a few fresh, raw egg yolk! It makes the ice cream extra creamy and adds loads of calcium and iron vitamins B6, folate, B12, A, D, E, and K to your treat!

Another fun addition is to substitute the vanilla extract for half peppermint extract. I like to use Flavorganics peppermint extract.
