Move over regular old mashed potatoes, make room for these extra delicious cheesy mashed potatoes in the Instant Pot!

Potatoes are one of my favorite foods. I can’t eat very much of them (only a few bites), but what I do eat, I love. Especially if it’s doused with butter, milk, and cheeeeeese. Everything’s better with cheese.

Cheesy Mashed Potatoes in the Instant Pot

Potatoes. I like to use good ol’ russet baking potatoes for my mashed potatoes. They’re cheap. They’re nutritious. They’re pretty readily available. Potatoes a great source of vitamins B3, B6, and C, and also have loads of potassium, copper, manganese, phosphorus, and of course fiber. They also have blood pressure-lowering compounds called kukoamines.

If you aren’t a fan of baking potatoes, you can use Yukon potatoes in this recipe, too. They are equally delicious. Also note that I don’t peel my potatoes. If you like them peeled, feel free to do so.

Cheese. I love using extra sharp cheddar in this recipe! Of course you can use whatever kind you like. Colby jack, regular cheddar, white cheddar… All good options. Pepper jack would be yummy to try, too! You can use pre-shredded cheese for these mashed potatoes, if you want. I usually just buy a block of cheese and shred it myself (I mean, have my 11 year old do it). It’s cheaper and believe it or not, it actually tastes better, too!

Seasonings. You can add all sorts of seasonings to mashed potatoes. But in my humble opinion, onion and garlic are the best. A little shake of cayenne powder would be yummy, or some paprika. Parsley is always a good addition to potato dishes, too.

Cooking and mixing options.

I love being able to make potato dishes in the Instant Pot. No waiting for water to boil or seeing if the potatoes are ready. No draining potatoes afterward. Of course, if you don’t have an Instant Pot, you can still make these cheesy mashed potatoes. Just cover them with water in a big pot, boil till fork tender, drain, and mash as instructed.

If you don’t have a stand mixer you can use a hand mixer, a wooden mixing spoon, or potato masher to mash the potatoes. The end product may not be as creamy, but it will still be delicious!

To reheat any leftovers, simply put them in a pot with a little more milk and mix regularly until they’re heated through.

Easy Cheesy Mashed Potatoes in the Instant Pot

Free from gluten, grain, eggs, and sugar.

Makes enough for 8 servings.

Ingredients

  • 10-12 russet potatoes (if they’re huge you probably won’t need this many)
  • 1 cup water
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup milk or broth/stock
  • 1/2 cup butter (1 stick)
  • Himalayan salt & pepper, to taste
  • 6 ounces extra sharp cheddar cheese

Instructions

Scrub potatoes and chop them into 1-inch chunks. Place the in the Instant Pot liner. (I use the Instant Pot Duo 6 quart 7-in-1.)

Add in the cup of water and the seasonings. Close the lid, seal the vent, and press ‘manual’ then set the time for 15 minutes.

When the time is up, quick release the vent.

Dump the potatoes and remaining ingredients into a mixing bowl (I use my stand mixer).

Mix until smooth and combined.

Add salt and pepper to taste.

Serve with a little parsley, if desired.
