Even though it doesn’t usually cool off down here in the south until around November, sitting down to a comforting bowl of soup is never something I turn down. I love how I can feel it nourish me from the inside as I eat it! And yes, I’m even one of *those* moms who isn’t against torturing her kids with a hot bowl of soup in the middle of summer!

Why should I keep such nourishing goodness from my family? Soup is such an easy way to pack in nutrients and use up those random leftovers hiding out in the fridge. ;) Plus soup pretty much always tastes amazing! Cheesy Broccoli Soup in the Instant Pot

This easy, cheesy broccoli soup in the Instant Pot really is such a comforting, nostalgic recipe. How could anything doused in cheese and filled with sour cream and broccoli not be delicious? Plus, making soup in the Instant Pot also cuts down on the cooking time immensely. This soup cooks in less than 10 minutes – not including the pressurizing time!

Broccoli. While broccoli for many is the quintessential vegetable for kids to hate, my family loves it! And even though it’s a little hard to digest raw, being a cruciferous veggie, I don’t mind letting them eat it cooked. Broccoli is a great source of dietary fiber and amino acids, like tryptophan. It also has a few necessary minerals and vitamins, like vitamin C and K.

Since broccoli is so expensive raw, I usually buy organic frozen broccoli for my family. You can use either for this recipe, though the directs for the cook time are specifically for frozen broccoli.

Cheese. Everything is better with cheese, my friends! Except maybe chocolate… But that’s debatable. Ha. If you are wanting to make this dairy-free, you can leave out the cheese (and the sour cream), or use a dairy-free option. I tend to not appreciate the ingredients in dairy-free cheeses, so I usually just leave them out when dairy is bothering me. However, when it’s not I love to add a little extra sharp cheddar to pretty much anything I can! And this cheesy broccoli soup is no exception….

Broth. You can use whatever broth you have on hand for this soup. Chicken, veggie, beef… fish. You can even just use water if you don’t happen to have any broth (I’m so sorry for you, if you don’t have broth on hand!). The broth does add a lovely flavor, and give the nutrient profile of this soup a nice boost!

Milk. As always, use whatever type of milk you can handle. I always use my homemade coconut milk or raw milk, when I have it on hand. The flavor will chance a little depending on the milk you use, but it won’t be super noticeable.

Optionals. Even though the name of this soup is cheesy broccoli soup, you can leave the cheese out if you need to. And you can leave out the sour cream, too. But I happen to think that sour cream makes just about every soup at least 2x better, and it’s gives a little bit of healthy cultures to the meal, as well.

Other than the dairy options, I like to add in a little cayenne pepper. It’s great for digestion and your circulatory system. I’ve also been known to add in a little cumin to my broccoli soup, so if you like that, you can use it instead (or as well!).

Easy Cheesy Broccoli Soup in the Instant Pot

Free from grain, gluten, eggs, and refined sugar.


  • 3 12-ounce bags of organic frozen broccoli
  • 2 quarts chicken or veggie stock
  • 1 teaspoon garlic salt*
  • 1 teaspoon onion powder*
  • 1/4 teaspoon cayenne powder
  • sea salt & pepper, to taste
  • 1/2 cup milk of choice (I use either coconut milk or raw milk)
  • 1/4 cup arrowroot powder, tapioca starch, or cassava flour (optional, for thickening, leave out for GAPS)
  • 1/2 cup sour cream
  • 8 ounces extra sharp organic cheddar cheese, shredded


Place broccoli, stock, and seasonings in the Instant Pot. Put the lid on and seal the vent. Set the manual timer to 4 minutes.

When the timer goes off, quick release the steam.

In a liquid measuring cup, whisk together the powder/starch/flour and the milk. Pour into the mixture into the broccoli soup, stirring while you pour.

Stir in the sour cream and cheddar cheese and serve.


*In place of garlic and onion powders, feel free to use fresh garlic and onions!
