Iced Yolky Caramel Macchiato.

Coffee. Most macchiatos are made with espresso. And just to be honest with you, I don’t have an espresso machine. So whenever I want to make something that calls for espresso, I just used strongly brewed coffee. You can do whatever you want, though. After all, this is *your* yolky caramel macchiato. Make it however you like!

When it comes to the type of coffee I use, I am kinda picky. I struggle with mold illness, and it just so happens that coffee beans are one of those things that are heavily sprayed with pesticides. Because of this I only buy mycotoxin-free coffee. Purity and Vita Cup are my favorites.

If you don’t struggle with mold issues, the organic options from Aldi are really good, too! If you don’t want caffeine, 365 organic decaf from Whole Foods and Wicked Joe organic French decaf are good. (I like that Wicked Joe one is also fair-trade).

Caramel sauce. Of course you can use whatever caramel you like, but…. I like to make my own. It’s sooooo easy, and so delicious! I have two options, a blender one, and a stove-top one. I always make the blender one when I don’t have time and it’s super hot out. But the texture is not as smooth as the one you cook on the stove. Just so ya know. They’re both delicious, though!

Egg yolk. Yes, this yolky caramel macchiato contains raw egg yolks. Don’t be afraid! While I would never tell anyone to eat a “normal” egg from factory-farmed hens raw, if you have a good source for pastured, organic eggs, raw egg yolks are packed with so much nutrition your body needs! In fact, eating raw egg yolks is one of the best ways to get vitamins B6, folate, B12, A, D, E, and K! Plus, the yolks contain 90% of the egg’s calcium and iron!

Of course, if you’re allergic to eggs, you can leave them out. Just maybe add in a scoop of grass-fed collagen instead.

Milk. While I have been dairy-free for long periods of time, I currently am handling little bits quite well. So I really love adding raw cows milk or fresh goats milk to this yolky caramel macchiato. When I don’t have that on hand, I use full-fat coconut milk. Thai Kitchen’s coconut milk or my homemade coconut milk are my favorites. You could also use almond milk if you want.

Paleo iced yolky caramel macchiato.

Iced Yolky Caramel Macchiato

Free from grain, gluten, and dairy.


  • 1 cup strongly brewed coffee (or 2 shots espresso)
  • 3 tablespoons caramel sauce (I use my easy homemade caramel sauce)
  • 1 fresh egg yolk
  • dash sea salt
  • 1/4 cup milk of choice (coconut milk, almond milk, fresh raw milk)
  • ice


With a spoon, drizzle a little of the caramel sauce around the inside of your cup.

Add ice and set aside.

Pour the rest of the caramel sauce, the coffee, egg yolk, and salt into a blender and puree until frothy.

Pour caramel coffee into your prepared glass and top with milk.

For fun, top with some homemade coconut whipped cream and an extra drizzle of caramel!
