All the chocolate things.

It doesn’t take a rocket scientist to discover that I love chocolate. Just taking a look at my recipe index clearly depicts the tendencies of someone (slightly) obsessed with anything chocolate. But you won’t catch me feeling guilty about it! I try hard to make sure all my chocolate treats are as healthy as possible so I can enjoy them whenever I want!

Chocolate for breakfast, cake for lunch, brownies for dinner… and then there’s snacks and dessert, of course. 😉

Chocolate Covered Strawberry Candies.

These beautiful little candies are not only healthy enough for snacking, they’re sweet enough for a healthy dessert! With simple, easy-to-find ingredients, they’re not a chore to whip up either.

Strawberry jam. You can honestly make these with whatever jam you have on hand. They will taste just as delicious if you use pretty much anything else! I like to use my homemade strawberry jam for these. It’s seriously so easy to make and you can save money making it, too!

Coconut oil. I use a little coconut oil to help these candies solidify some. There isn’t another oil I can think of that I would suggest substituting. Sorry. However, if you can do dairy, butter might be an option, though you might have to wait longer for the candies to solidify in the freezer before you dip them in the chocolate coating.

Cocoa power. Like in all my recipes, Azure Standard’s fair-trade, organic cocoa powder is pretty much all I use! It’s absolutely the best. If you don’t have an account with Azure Standard, the Anthony’s brand on Amazon is also good. Though of course you can just use whatever cocoa powder you like.

I haven’t tried these with carob for a cocoa substitute, but I think it would work just fine!

Sweetener. For pretty much everything, I love sweetening honey. It’s one of the most nutrient-dense foods there is! If you don’t want to use honey, you could try other liquid sweeteners like maple syrup, coconut syrup, or agave.

Shaping options. Even though I used cute little silicone heart molds to make these chocolate-covered strawberry candies a fun treat, they can just as easily be poured into a pan. If you want to make them in a pan, just use this system:

  1. cover a loaf pan with parchment
  2. layer of half the chocolate – chill to harden
  3. layer of strawberry filling – chill
  4. layer of chocolate – chill to harden
  5. remove from pan and cut into squares and enjoy!
