Frozen Reishi Hot Chocolate

I have long been a fan of hot chocolate, and since moving to the south, frozen hot chocolate has specifically become a favorite family drink! It’s super simple to whip up in a blender, and the recipe is very easy to double if you need to feed more than just yourself. If you’re looking for a plain version, you can just leave out the reishi powder. I also have a fancy Mexican-inspired version, as well.

Of course, you don’t have to drink it frozen, this makes just as delicious of a cup of hot chocolate without the freezing part…

The Ingredients

Milk. I like to use raw milk when I can get it. It is unfortunately super expensive. Thankfully, coconut milk is a cheaply made alternative! Here’s my recipe for homemade coconut milk. If you don’t have the time or desire to make your own you can always just buy coconut milk from the store. Just look for a brand with as few ingredients as possible. I’m not opposed to my coconut milk containing guar gum, since I don’t buy it very frequently, but I do prefer coconut milks that are only coconut and water. Thai Kitchen is a good brand for that, and Azure Standard’s coconut milk is good, too.

Cocoa. I pretty much exclusively use Azure Standard’s cocoa powder. It’s organic, fair-trade, and cheaper than buying cocoa powder at the grocery store! Plus it makes everything it touches taste delicious. In my opinion, anyway!

Not only is it delicious, cocoa is one of the best sources of antioxidants on the planet. It also contains vitamins and minerals, like vitamin B12, niacin, riboflavin, and vitamin E, and is full of magnesium, phosphorus, potassium, copper, iron, manganese, zinc, and calcium. So you don’t have to be ashamed of drinking this frozen reishi hot chocolate!

Reishi powder. If you’ve never been introduced to reishi mushrooms before, let me be the first to tell you – they’re amazing! Since they’re full of bioactive compounds like antioxidants and fiber-rich beta-glucan, these little guys help the body’s immune system do battle by telling your body to produce white blood cells.

And if you’re not a mushroom fan, don’t worry, adding reishi powder to your hot chocolate can be your little secret, cause you don’t even really taste it. If anything, it helps give this frozen reishi hot chocolate a deeper, earthier flavor. And I love it!

If you’re into foraging mushrooms, be my guest (but please be careful!). I usually just get my reishi powder from Amazon – Anthony’s brand, specifically.

Sweetener. I like to sweeten my drinks with honey. Azure Standard’s honey is delicious and light, and it’s pretty cheap for a wild honey, too! You can use whatever sweetener you like, though. Maple syrup would probably be delicious, and coconut syrup, too. I haven’t tried stevia, but if you’re into using that, feel free.
