Grain-Free Skillet Pizza

Don’t miss out on pizza night again with this easy thin crust, grain-free skillet pizza! Only three ingredients needed for the crust, but the possibilities for toppings are completely up to you! Made on a cast iron skillet, this pizza starts out on the stove-top, then gets broiled to give the cheese a nice crispiness that is so delicious.

This easy grain-free skillet pizza originally came about as a modification of my cassava flour pancakes. After leaving out the baking powder once I stumbled upon a crepe and decided it needed to become a pizza crust. It works beautifully!

Ingredients

Eggs. I know, it would be lovely if I had an grain-free AND egg-free pizza crust recipe for you, but I don’t. I’m sorry. I haven’t ever tried to sub the eggs for anything else when making this pizza crust. If you want to be adventurous and try something out, please be my guest and let me know how it goes!

If need be, you could get away with using only 1 egg, but 2 works the best.

Oil. I use olive oil to give this grain-free skillet pizza crust a nice, deeper flavor. You could use avocado oil, too, or even melted coconut oil or butter too. In fact, I’ve also just used water in place of the oil and that works too. But I like the texture of the crust with oil better.

Flour. Cassava flour, to be exact. I love the light texture and flavor of cassava flour. It’s perfect for most baked goods, as well as this pizza crust! I use Azure Standard’s cassava flour for this recipe.

Toppings. I really love this pizza plain jane – just a little homemade tomato sauce, some shredded mozzarella cheese, and a sprinkling of Italian seasoning. When I’m feeling fancy I like to add chopped bell peppers. You can literally add whatever you want, I won’t yell at you.

Since tomato sauce usually bothers me, I eat it very sparingly. So most of the time I make this into a skillet-full of cheesy bread by drizzling on some olive oil and then adding the mozzarella and seasoings. Another delicious option is topping it with some tuna and cheddar before broiling it for a yummy tuna cheddar melt!

Grain-Free Skillet Pizza

Free from grain, gluten, and sugar.

Ingredients

Crust:

Toppings:

  • 1 cup tomato sauce of choice
  • 1/2 cup shredded mozzarella cheese
  • Italian seasoning
  • olives, chopped peppers, or whatever else you want

Instructions

Preheat large cast-iron skillet over medium-high heat with a tablespoon of coconut oil (or olive oil). Preheat oven to broil.

In pint-sized liquid measuring cup or bowl, whisk eggs and oil.

Add in cassava flour and salt and whisk until smooth.

Pour crust batter onto preheated, greased skillet. Tilt the skillet to spread the batter around until it covers the pan.

Cook until crust begins to dry out.

With a flipper and a fork, carefully flip the crust in the skillet.

Top with sauce, cheese, etc.

Stick the whole thing in the preheated oven and broil for 3-5 minutes (depending on how hot your oven is and how crispy you like your cheese).

The crust will be soft.
