With only a few simple ingredients, and only one bowl needed, this chocolate chip coffee cake is a delicious grain-free treat you can serve for breakfast or dessert!

Breakfast, or dessert?

There’s no doubt in my mind that breakfast is my favorite meal of the day. I love starting my day off with some protein and healthy fats…. and something sweet to end it all. Either an apple, a little piece of chocolate, or something a little more dessert-ish, like brownies or a piece of coffee cake.

This grain-free chocolate chip coffee cake is my family’s latest favorite after-breakfast treat! I love that it’s only a few ingredients and sweetened with honey so there’s no need to feel guilty for shoving a bunch of sugar in my face early on in the day.

Chocolate Chip Coffee Cake

Eggs. I know, four eggs is kinda a lot. You can try using 2 if you want. I haven’t, but it would probably still work. Just maybe not be quite as fluffy. And some people like less fluffy, so if that’s your thing – go for it. I haven’t tried any egg substitutes for this recipe. Let me know how it goes if you try a sub!

Oil. I usually use Azure Standard’s coconut oil for my recipes. It’s hands down the best coconut oil I’ve ever used AND it’s so affordable! If you’re worried about coconut flavor, don’t be. There isn’t any in this coconut oil. But if you have a coconut allergy you can use olive oil, avocado oil, or even butter.

Honey. This is the only sweetener in this chocolate chip coffee cake. Well, other than the chocolate chips (my homemade chocolate chunks recipe uses honey, too). I haven’t tried to use any other kind of sweetener. I would assume a liquid like maple syrup would work just fine (though the texture might be different).

Flours. I use cassava flour and almond flour for this recipe. I have used only cassava flour, so if you need to you can do that. It works just fine.

Chocolate chips. Now, you can totally make this without chocolate chips if you want. But why in the world would you want to? You can use regular chocolate chips, if that’s your thing. Or you can spend a small body part in payment for dairy-free, sugar-free chocolate chips from Amazon or whatever. Orrrr you can make my easy homemade chocolate chunks and use those! They are dairy-free and only sweetened with honey and so, so delicious.

Optional add-ins. If you want, you can add some other yumminess to this chocolate chip coffee cake. Chopped walnuts or pecans, dried cranberries, cinnamon, almond extract… These are all good ideas!

Chocolate Chip Coffee Cake

Free from gluten, grain, dairy, and refined sugar.



Preheat oven to 350 and grease a 9×9 inch baking dish with olive oil.

In a large bowl, whisk eggs, coconut oil, honey, and vanilla.

Dump dry ingredients on top and mix until combined.

Fold in chocolate chips.

Spread into prepared baking dish and bake for 25 minutes.
