Summer love.

Summer is upon us and with it comes the near constant requests for popsicles from my children. Who can blame them? There’s not much quite as nostalgic as sitting on the porch in the hot summer sun eating a popsicle.

Of course, it doesn’t really need to be over 90 degrees for you to enjoy popsicles. I guess I enjoy a good bowl of healthy ice cream during December, so why not popsicles, too? If it were up to my kids we’d be eating them year ’round….

Easy avocado fudgesicles.

While popsicles are a daily request, my kids do love it when I switch things up and get fancy. And by that I mean, make fudgesicles. These easy avocado fudgesicles are a favorite! Not only are the easy (like the name clearly states), they’re also packed with nutrition from the fruit and coconut oil in them!

First off, avocados are full of healthy fats – mainly monounsaturated fatty acids, or MUFAs – which effectively block plaque buildup in the arteries. That’s right, they’re good for your heart! Avocados are also packed with vitamins, minerals, antioxidants, and phytosterols. These vitamins and minerals include calcium, iron, magnesium, potassium, copper, manganese, phosphorus, zinc, and they’re high levels of fat-soluble vitamins A, E, and K,  and water-soluble vitamins C and B (they have B1, B2, B3, and B6!). Avocados also contain thiamin, riboflavin, and fiber.

These easy avocado fudgesicles aren’t super dark chocolate. They’re delicious to eat plain, and fun to roll in things like chopped pecans or walnuts, shaved chocolate, shredded coconut… whatever you like, really!

If you don’t want to use honey in your fudgesicles, you could probably use maple syrup. Please note that I absolutely never have maple syrup on hand, so I haven’t tried this! But I imagine it would still taste delicious… 😉

Easy Avocado Fudgesicles

Free from grain, gluten, eggs, dairy & refined sugar.

Ingredients

Instructions

Place all ingredients in a blender (I use a Blendtec) and puree.

Pour into popsicle molds (I use these) and freeze until set.

Run fudgesicles until warm water to remove from molds. 

Sprinkle with, or roll in, chopped nuts and/or shaved chocolate or coconut shreds, if desired.
