Easy mornings.
As a busy (and tired) mom of six crazy kiddos, I like my mornings easy. I prefer not to be awaked at 6am by a 2 year-old who needs help getting on the toilet, or by a 5 year-old princess warrior who can’t find her favorite shirt. I’d love to just wake up when my body is ready, spend some time lounging in bed reading my Bible, and then meander out to find that my 13 year-old has already made the family breakfast and the morning chores have all been done without me asking.
I mean, is that too much to ask?
You’re right. It probably is.
But if I can’t have easy mornings, at least I can have easy nourishment available to me. Something simple for breakfast, and then a delicious, nourishing drink that I can whip up quickly as we get into school.
A healthy caffeine boost.
While I do enjoy a good, nourishing mug of coffee in the morning, there are other ways to get that much needed energy. One of my favorite ways is matcha.
When compared to coffee, matcha has about the same amount of caffeine. But while coffee spikes your energy levels and then drops them off rather abruptly, matcha controls the caffeine release by making use of the amino acid L-Theanine. This delivers a more calming, relaxing effect as opposed to the normal jolt of energy and accompanying jitters (though not everyone gets those, I know).
Matcha also boosts your metabolism and contains chlorophyll, vitamins A and C and is one of the best sources of antioxidants in the world!
Paleo Peppermint Matcha Latte.
As with most of my drinks, this paleo peppermint matcha latte is super easy to whip up in the blender. It can be served hot or over ice, depending on how you like it (and/or the time of year).
While I love sweetening it with honey for added antioxidants, minerals, and vitamins, you can sweeten it with stevia or monk fruit, if you need a low-carb sweetened drink.
For added protein boost, I love to stir in some kosher, non-GMO collagen. It’s important for healthy skin, hair, nails, plus it supports your joints, and improves gut function and digestion. Perfect Supplement’s collagen is made from grass-fed cattle and is 100% pesticide and hormone-free.

Paleo Peppermint Matcha Latte
Free from grain, gluten, eggs, dairy, and refined sugar.
Ingredients
- 1 cup dairy-free milk (I love using my homemade coconut milk!)
- 1 teaspoon matcha powder
- 2 teaspoons non-GMO, kosher collagen (leave out for vegetarian/vegan)
- 2 tablespoons coconut oil, liquid state
- 1/4 teaspoon vanilla (I use either Azure Standard’s or my homemade stuff)
- 1/4 teaspoon peppermint extract
- 3-4 tablespoons honey (or monk fruit or stevia, to taste for keto/veg)
Instructions
Place all ingredients in a blender (I use a Blendtec) and pulse until pureed and slightly frothy.
Drink as is, or…
Heat milk until steaming over medium-low heat, then pour everything into a blender (I use a Blendtec) and pulse until pureed and slightly frothy.
Garnish with coconut whipped cream for an extra treat!
