As a mom of many kids, I’m always looking for the easiest ways to pack nutrition into my family. One of the easiest ways is eggs. Thankfully, none of my kids are allergic to eggs, so we eat a LOT of them. In fact, we eat so many eggs that, even though we have 10 laying hens, we still have to buy at five or six dozen eggs a week to keep up with our meals.
Eggs are a super easy, cheap breakfast (or lunch, or dinner). You don’t need any other ingredients to make eggs for any meal, and they’re packed with nutrition. Eggs contain the highest quality protein in any food, and are packed with vitamins B6, folate, B12, A, D, E, and K, antioxidants zeaxanthin and lutein, and amino acids. Plus calcium and iron!

This easy paleo frittata with ground beef and kale is a hit every time it comes out of the oven. I know y’all are gonna be jealous, but when it comes to breakfast I’m always at the top of my game. And by top I mean I make my kids only the easiest things I can in the morning. ‘Cause I’m not a morning person.
Fried eggs, hard boiled eggs, easy French-style omelettes (though truth be told, my kids usually make these themselves), homemade granola, a big bowl of oatmeal, brownies (er, um, kidding… maybe). Easy for the win.
Sometimes, though, I do listen to their please to serve them something interesting for the first meal of the day. Hence this fancy, yet easy paleo frittata.
Yep, it’s fancy. And even though it doesn’t really take all that long to whip up, it’s soooooo delicious. So even if you’re not in the mood for making it for breakfast, make it for a fun breakfast-for-dinner served with a simple side salad (or without one, it is actually a pretty good meal on its own).

Even though I struggled with an intolerance to eggs for years, ever since I completed the GAPS Diet, I’ve been enjoying them again in moderation. And one of my favorite ways to eat eggs is this easy paleo frittata. Not only is it easy enough that my kids can make it, it’s also healthy and super tasty!

Easy Paleo Frittata with Ground Beef & Kale

Ingredients
- a couple tablespoons coconut oil (or whatever fat you like)
- 1/2 pound ground beef (organic is best!)
- 1/2 teaspoon garlic powder
- 18 pastured/free-range/organic eggs
- 1 tablespoon parsley
- 1 teaspoon Himalayan salt
- 1/4 teaspoon pepper
- 2 cups organic kale, chopped finely or roughly (whatever you want!)
- optional, for keto: 1/4 cup Parmesan cheese
Instructions
Preheat oven to 350F and grease a 9×13 inch baking dish or two 9-inch pie plates. (Alternatively, you can bake this in a 12-inch cast iron skillet after you fry the ground beef in it.)
In a skillet, heat a little coconut oil over medium heat. When oil is hot, add in ground beef, cooking until just done. Season with garlic powder, some of the salt and pepper, and set aside.
In a large bowl, whisk together the eggs, herbs, and remaining salt and pepper until thoroughly combined.
Pour into prepared dish(es).
Sprinkle with ground beef and chopped kale, and sprinkle with cheese, if using.
Bake for 35 minutes or until golden brown on top.
