Simple summer treats.
When the weather heats up, my body slows down. Any one else struggle with this? There’s something about the humidity in these southern summers that just sucks the get-up-and-go right out of me. As my dad says, “My get-up-and-go got up and left.”
It’s true. So summers require easy meals, snacks, and treats. Smoothie bowls for breakfast, Instant Pot meals for lunch and/or dinner, and no-bake treats for snacks and dessert.
Though if I’m perfectly honest, sometimes ice cream covers all those spots in my meal planning calendar.
Vanilla kefir ice cream.
The past few months this vanilla kefir ice cream has been on the menu almost daily. Weekly at the least. It’s so easy that I can whip it up in the blender at lunch time and have it ready to eat for dinner. No churning, no stirring in the freezer (though I do that sometimes ’cause I’m impatient).
This delicious vanilla ice cream only has 4 ingredients – plus an optional one – and is perfectly safe for traditional, primal, and GAPS diets. If you can have dairy, that is… And I’ve included a keto/low-carb sub, if that’s what you need.
Milk Kefir love.
Milk kefir daily is something I make pretty much daily, since my family enjoys it so much. They love it in smoothies, ice cream, cheesecake, salad dressings, deviled eggs, popsicles, and ice cream.
If you’ve never had fresh milk kefir, you should definitely add it to your “must try” list. We eat mostly a traditional/primal diet, and milk kefir is the perfect addition to the hard cheese, butter, and occasionally sour cream and homemade yogurt we eat.
If you’re interested in getting into the cultured dairy game milk kefir is a great place to start. It’s the easiest cultured food to make, and it’s packed full of nutrition! Milk kefir has as many as 30 strains of probiotic bacteria (more than yogurt) and it also has amazing levels of vitamins B12 & K2, calcium, magnesium, biotin, and folate, plus enzymes.
Though you can buy it at most health food stores, milk kefir can easily be made at home on your kitchen counter. You can purchase starter grains can be online, or you could try your local Weston A. Price Foundation, farmer’s market, or Azure Standard drop.

No-Churn Vanilla Kefir Ice Cream
Free from grain, gluten, and refined sugar.
Ingredients
- 4 cups fresh milk kefir
- 4 fresh egg yolks
- 1/2 cup raw honey or 1 teaspoon unflavored liquid stevia for keto
- 2 tablespoons vanilla extract (I like to make my own, or use this kind)
- the scrapings of a vanilla pod (totally optional)
Instructions
Place all ingredients in a blender (I use a Blendtec) and puree until smooth.
Pour into freezer-safe container (I just use a loaf pan) and freeze until set.
Stir every couple hours or so, if desired.
Serve as is, or enjoy it in a kombucha float (recipe coming soon!), or over a fresh-baked brownie or slice of pie or crisp!

Do you know if I wanted to substitute a liquid sugar free syrup, would it be the same amount as the honey? I use skinny syrup brand. I use them in a lot of my fat bombs instead of powdered sweetener but have never made ice cream.
I would do a taste test before your freeze it. Honey is very sweet, so you might want to adjust based on how your sweetener compares. I’ve never tried the skinny syrup brand, so I’m not sure how much of that I would use. 🙂
Does it have the typical consistency of ice cream or does it freeze solid?
It will definitely freeze solid if you leave it overnight. For best results, eat after it’s been setting up a couple hours.
