It’s May. That basically means it’s been summer in the south for about… all year? Kidding. Only the last two months. But even though it’s always hot down here in my opinion, it is getting to the place when I actually start debating whether or not dinner is worth turning the oven on for.
And that’s when I turn to no-bake things like salads, smoothies, and ice cream. Yes, I do feed my family ice cream for dinner. Healthy homemade ice cream. But that’s beside the point of this post.
This post is about dessert.
As much as I debate turning the oven on for dinner during the summer months, I debate turning it on for dessert even more. ‘Cause my family knows how hard it is for me to go a week without a pan of nice fudgy brownies, or a chocolate cake to get me through. #comfortfood
So when I happen upon a fun and tasty treat that doesn’t require the oven, I’m pretty much in heaven. And this paleo no-bake avocado matcha tart is my latest fav. I based it off my no-bake chocolate avocado tart, which is always a hit, and it was devoured!

If you’re wondering why on earth I would stick avocados in my dessert, well, it’s because dessert is the perfect place to hide things that you don’t want to eat, but know you should eat. And avocados are def in that category for me. I’ve never liked them much – though the GAPS Diet made me tolerate them 50,000,000x better than before – but I know they’re SUPER good for me and my body needs them.
Avocados are packed with good fats like monounsaturated fatty acids, or MUFAs, which block plaque buildup in the arteries (making them good for your heart!). And they’re also full vitamins, minerals, antioxidants, and phytosterols!
Avocados have loads of calcium, iron, magnesium, potassium, copper, manganese, phosphorus and zinc. And they’re packed with lots of the fat-soluble vitamins A, E, and K, and the water-soluble ones (C, B1, B2, B3, and B6!).
Plus on the not-health-related-side, avocados make desserts super smooth. Double win!

Paleo No-Bake Matcha Avocado Tart
This latest favorite dessert has the bonus of healthy avocados PLUS the nutrients of matcha. Matcha has about the same amount of caffeine as coffee, but energy boost is a slow-release. And while coffee spikes your energy levels and then drops them off rather abruptly, matcha controls the release of caffeine by making use of the amino acid L-Theanine, and has a more calming, relaxing effect. Matcha also boosts your metabolism and contains chlorophyll, vitamins A and C.
On top of being super healthy, this delicious, paleo no-bake matcha avocado tart is super easy to put together. The crust is only three simple ingredients, mixed with a fork and pressed into a pan. And for the filling all you do is blend stuff and pour stuff. Can’t get much simpler than that. 😉
And when it’s hot out, not only do I not want to turn on the oven, I also don’t want to spend a bunch of time preparing stuff. So this is a win, win, win… win dessert.

Paleo No-Bake Matcha Avocado Tart
Free from grain, gluten, eggs, dairy, and refined sugar.
- 1 1/2 cups almond flour
- 1/4 cup coconut oil
- 3-4 tablespoons honey
- 1/2 cup coconut oil
- 1/2 cup honey
- 3 small, ripe avocados
- 2 teaspoons matcha powder
- 1/2 teaspoon vanilla extract (I like to make my own or use this one from Azure Standard)
In a bowl, combine the crust ingredients with a fork. Press evenly into a 7-inch springform pan or cake pan with a removable bottom.
Add filling ingredients to a blender and puree until smooth.
Pour into filling and freeze until set – about 1 hour.
Store leftovers in the freezer.
