Easy Italian Garlic Breadsticks
I started with the breadsticks and they were an incredible hit. Such a hit that I had to make them twice. Well, I actually made them twice because after my first batch (which was totally delicious), I realized Iβd made them wrong so we had to make them again. Nobody complained. πΒ
The breadsticks begin with a double batch of Mayaβs easy fathead dough recipe (that was my mistake the first batch β I didnβt double it). Honestly, this was my first time ever making fathead dough, since I donβt eat dairy, and even though it was delicious, it wasnβt as easy to make as I thought. Reason being β I tried to make it by hand.
So learn from me, all you new-to-fathead-dough-ers. USE A MIXER. For the love of breadsticks, use a mixer. If you do you will be rewarded with some gorgeous, pliable, delicious dough. Instead of some lumpy, dry in some places, dough. πΒ

A delicious addition.
After figuring out the fathead dough, the breadsticks came together easily and beautifully and were βjust like normal,β according to my family. π Serving them was like being in an Italian restaurant and getting those amazing never ending breadsticks that make you forget what you ordered cause all you care about is breadsticks.Β
Of course at restaurants you get a nice dipping sauce with your breadsticks, so I had to whip up one of those too. It was super simple to do, and a wonderful way to add a fun pop of flavor to the breadsticks (not that they donβt have flavor on their own, of course).

Keto Italian Garlic Breadsticks
Free from grain, gluten, and sugar.
Ingredients
- 3 cups mozzarella cheese
- 1/4 cup cream cheese
- 2 eggs (use 4 eggs if making with coconut flour)
- 1 teaspoon baking powder
- 3/4 cups almond flour or 2/3 cup coconut flour
- 1 teaspoon garlic powder
- Italian seasoning
- Himalayan salt
Instructions
In the bowl of a stand mixer, whisk together the almond flour, baking powder, and garlic powder. Set aside.
In a double boiler, combine the cheeses. Stir regularly as it melts. Continue to melt it until itβs smooth and creamy.
Cool the cheese mixture a minute, then add to the flour along with the eggs.
Put on the paddle attachment and mix until a uniform dough forms.
Chill the dough for 30 minutes, until itβs not too sticky to work with.
Preheat oven to 350 and line a cookie sheet with parchment or silpat.
Divide the dough into 8 pieces and shape or roll into a log about 1 inch thick and 6-7 inches long.
Place the breadsticks about 2 inches apart on the prepared cookie sheet and flatten slightly.Β
Brush with melted butter, sprinkle with Italian seasoning and salt.
Bake for about 18-20 minutes, or until golden.

Easy Dipping Sauce
Free from grain, gluten, eggs, dairy, and sugar.
Ingredients
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 1 teaspoon oregano
- 1/4 teaspoon basil
- pinch red pepper flakes
- 1/4 cup parmesan cheese
Instructions
Combine all ingredients except the cheese in a shallow saucepan and warm to the touch.
Stir in the cheese and serve with warm breadsticks.

Raia do you know of any good resources for gluten free AND egg free recipes that are keto and or paleo style? We actually tolerate dairy very well but not gluten or eggs and itβs really hard to find recipes (especially for bread) that are both gluten and egg free.
Hmm… yeah, grain-free AND egg-free can be tough to find. I would check out EatBeautiful.net. Just type egg-free in her search bar and see what comes up. I know one of her kids can’t do eggs, so she has a lot of egg-free stuff. π
What is the carb count. I have wanted to make this for a long time but am on a restricted diet
It is certified low-carb from my friend’s cookbook. I don’t remember the actual count, but you could plug the ingredients into a carb counter and see what it is.
