This paleo caramel sauce has a deep, rich flavor and thick, creamy texture. With only 3 ingredients, it’s easy to make and tastes delicious!
A new date… with dates.
Though I grew up kinda picky, since becoming gluten-free (and even more so since the GAPS Diet), there are very few foods that I don’t like. I still can’t handle lima beans, or fresh tomatoes, or dates.
Yes, I know dates are sweet, and I love dessert and fruit. But I can’t handle the texture. Or the fact that they look like… um, bugs.
So I’ve shied away from using dates as a sweetener in my paleo/GAPS baking, even though I know they’re good for you and a great alternative to regular granulated sugar.
But recently a friend moved and gifted me all her baking products that she couldn’t take with. And amongst those things was a jar of date sugar. Since it was granulated (ground up, dehydrated dates) it doesn’t look like bugs OR have that weird texture, so I had no issues in using it.
Paleo & GAPS Caramel Sauce.
Lately I’d been craving caramel, and since dates have a nice caramel-y flavor, one of the first things I made with my date sugar was this caramel sauce. It was so super easy that I knew I had to share the recipe with y’all.Â
This paleo caramel sauce only has three ingredients: date sugar, almond or coconut milk, and coconut oil. You pretty much just mix them together, heat, and cool. Since the date sugar is not very finely ground, you might want to stick your final product in the blender and puree a tad to smooth it out. That’s totally up to you, though. I don’t always do that step.
A delicious favorite.
Since learning of my love for homemade I’ve been adding it in all sorts of things. In my coffee, on my bagels, on top of pumpkin cake… recipe for that last one coming soon, I promise!Â

Paleo Caramel Sauce
Free from grain, dairy, eggs, and refined sugar.
Ingredients
- 14 ounces almond or coconut milk (homemade coconut milk works, too!)
- 1/4 cup coconut oil
- 1 cup organic date sugar
Instructions
Place everything in a small saucepan and heat until just boiling, stirring frequently.
Reduce heat to low and simmer, stirring frequently, for 15 minutes.
If your sauce is a little grainy, pour into a blender and puree.
Store in fridge for about a week. It might seem watery at first, but it will thicken as it cools.
