Perfectly spiced, with a hint of chocolate, this Gingerbread Spiced Mocha Latte is a delicious and comforting drink. It’s great for a treat or something fancy to wake up to!

Even though I live in the south, fall has me dreaming of all the warm, comforting drinks. The temp is just barely below 80 degrees, so I’m safe to have hot chocolate, right? Of course I’m one of those people who drinks hot chocolate year round, just with ice added.

If you know any of my allergy history from aforeread posts on this blog (yes, I just made that word up), you’ll know coffee and I haven’t had the best relationship over the years. In fact, my relationship with coffee used to be so bad that I couldn’t even walk down the coffee/tea isle at the grocery store without needing help breathing.Â
But then I met the GAPS Diet and our relationship changed for the better. I can now enjoy mochas and lattes to my heart’s content! As long as they’re dairy-free and sugar-free, which thankfully isn’t that hard to accomplish.
Gingerbread Spiced Mocha Latte
This gingerbread spiced mocha latte is one of my and my 12-year old’s latest favorite drinks. It’s just like drinking a cup of hot cocoa with some coffee and gingerbread extract stirred in. I’m not sure if gingerbread extract is a thing, but if it isn’t it probably should be.
I’m not a barista, so I’m not sure if a mocha latte is thing, either. But I’m officially coining it right here and now. If you wanna leave out the cocoa powder and just have it be a gingerbread latte, no judgement. The cocoa is such a delicious addition, though!
You can also leave out the molasses, if you are on the GAPS Diet still. Thankfully I’ve successfully fazed off it, and I seem to be handling molasses just fine.

Gingerbread Spiced Mocha Latte
Free from grain, gluten, eggs, dairy, and refined sugar.
Ingredients
1 cup coffee
1 cup almond or coconut milk (I prefer almond for this)
1/4 cup coconut oil
3 tablespoons honey
1 tablespoon molasses (leave out for GAPS)
2 tablespoons cocoa powder
1 tablespoon gelatin (I use Perfect Supplements), leave out for veg…
1/2 teaspoon cinnamon
1/4 teaspoon ginger
1/8 teaspoon nutmeg
pinch of cloves
pinch of Himalayan salt
Instructions
Place everything in a blender (I use a Blendtec) and puree on high until frothy.
Enjoy!

I love the flavor of gingerbread in lattes, but of course, sadly, the ones you typically get from coffee shops are far too sweet for even my sweet tooth. It’s so appealing to make one at home to suit!
