Based on the weather around here lately, I’m guessing we’re currently in what are called the dog days of summer. I have no idea why they’re called that, but they’re awful. Down here in the south it’s so hot out that my kids won’t go outside and play. Isn’t that what summer break is for? Come on, kids…
Anyway, with all this awful heat there’s no way I’m turning on my oven to bake something, but I don’t want to go without treats, either! Solution: no-bake desserts.
Now usually I’ll go for ice creams and freezer fudges, but sometimes I want something a little more fancy. Just for fun. No-bake chocolate avocado tart it is!

You might know (if you’ve been around my blog for a while) that I’ve not always been the biggest fan of avocados. I’m not entirely opposed to their taste, so I’m guessing it’s a texture thing. Of course, being on the GAPS Diet for two years helped me to get over that distain, but I still eat them rather sparingly. And when I do eat them, they’re usually in the form of a desserts.

Chocolate Avocado Tart
This easy and delicious chocolate avocado tart is my latest rendition of dessertified avocados. It’s pretty dang easy to put together, since all you really need is a blender and a small pan to freeze it in. I use a little 7-inch springform pan, but you could use a casserole dish lined with parchment paper instead.
If you’re thinking, dessert = healthy? It is. Not only are there benefits to the honey, coconut oil, and Himalayan salt in this dessert, the avocado sends the healthy content through the roof! Avocados are one of the most potassium-rich foods out there, and they’re also a great source of fiber, healthy fats, and vitamins E, B-s, folic acid, and vitamin K. They also contain minerals like calcium, iron, magnesium, potassium, copper, manganese, phosphorus and zinc.
Perfect for a dessert. 😉

No-Bake Chocolate Avocado Tart
Free from grain, gluten, eggs, dairy, and refined sugar.
Ingredients
Filling
- 2 fresh, ripe avocados
- 1/2 cup honey (raw and local is best!)
- 1/2 cup coconut oil
- 1/4 cup cocoa powder
- 1 teaspoon vanilla extract (I like to make my own or use this one from Azure Standard)
- 1/4 teaspoon Himalayan salt
Crust
- 1 1/2 cups almond flour
- 1/4 cup coconut oil
- 2 tablespoons honey
Instructions
In a bowl, combine crust ingredients until coconut oil and honey are evenly distributed. Press into 7-inch springform pan.
Place filling ingredients in a blender (I use a Blendtec) and puree until smooth. Pour filling over crust and spread smooth.
Freeze until set then remove from pan. Garnish with shredded bakers chocolate or serve with coconut whipped cream.
