Ice cream year-round.
I know, I know, it’s only March. And just only, at that. But if you ask me (or anyone in my family) there’s no wrong time of year to have ice cream. Especially mint ice cream. We regularly have “nice” cream for lunch and snacks. And since I always sweeten with natural sweeteners, I don’t mind having ice cream on the menu.
Though to be honest I usually make it during nap time and don’t share. ‘Cause I’m a thoughtful mom and there really isn’t enough for 8 people and I don’t want them to have to argue about who got more… and stuff.
I’ll save the popsicles for the kids.

An old favorite.
This fun and easy recipe happens to be one of my earliest. Way back when I was just blogging to have somewhere to store my recipes (and had NO idea anyone else was reading them) this happened for lunch with my then 1-year old. Even though I updated the recipe, I couldn’t get rid of these old photos. He’s just so. dang. cute. He still is, but I don’t tell him much anymore, ’cause that’s not cool in 8-year old. 😉
Hidden veggies.
Besides being refined-sugar free, I also like to sneak as much nutrition into my ice creams as possible. Usually by the way of veggies. This Mint Chocolate Chip Blender Ice Cream boasts baby spinach! Even though most of my family enjoys spinach, I have a couple kids who won’t eat it. They will, however, eat this ice cream! #momwin
Mint Chocolate Chip Blender Ice Cream
If you don’t have any spinach on hand, you could use kale instead. Spinach is a little milder in flavor though, so just beware that the flavor might change. I love using my homemade coconut milk in this recipe, too, but you can totally use store-bought stuff. My favorite canned coconut milks are from Thai Kitchen, Native Forest, or 365. These brands have the fewest ingredients.
I also like to use my homemade chocolate chunks in pretty much everything. They’re super easy to make and sweetened with honey, so they’re safe for paleo and GAPS lifestyles. Of course, if you want to just use regular dairy-free chocolate chips, you can do that as well.

Mint Chocolate Chip Blender Ice Cream
Free from grain, gluten, eggs, dairy, and refined sugar.
Ingredients
- 12 oz. coconut milk (I like to use my homemade coconut milk)
- 1/2 c. organic baby spinach leaves (you can use frozen spinach if you want)
- 1/4 c. honey
- 1 t. peppermint extract
- 1/4 c. dairy-free chocolate of choice (I like to use my homemade chocolate chunks)
- about 18 ice cubes
Instructions
Place everything in blender (I use my Blendtec) and blend on high until smooth and creamy.
Consume. 😉
Refrigerate leftovers for a smoothie later, or freeze them and re-blenderize them with a tad more coconut milk for more ice cream!
