About the time February hits, I’m done with winter and in need of some serious comfort food. I love filling my belly with chilis, veggie pastas, and meatballs, but there’s still one comfort food I need… Y’all know what kind I mean: brownies. Cake is good, cookies are good, there is definitely a time and a place for ice cream, but in the dead of winter I need brownies!
They’re fudgy, dark, decadent, and the perfect comforting treat to get me through to spring.

Mexican blender brownies.
These paleo Mexican blender brownies are new to my list of favorites. I’ve always loved adding spice to my chocolate, but I had yet to perfect a Mexican chocolate brownie… until now.
Dark and rich, these little beauties are pretty close to the perfect mix of heat and sweet. If you’ve never tried Mexicanizing your chocolate, I strongly suggest you give it a try.
The players.
If you’re not quite sure what makes chocolate Mexican, let me enlighten you. (Actually, I’ve never been to Mexico, so I can’t say 100%, but I’m just guessing off my love for Taza chocolate bars…) It’s really pretty easy.
First off, you need some good quality spices. I like this bulk cinnamon from Frontier Herbs, but I’ve also used Costco’s cinnamon and it’s not bad if you’re in a pinch. Simply Organic’s cinnamon is good, too! Speaking of Simply Organic, I’d use their stuff for the chili powder, too. And the black pepper.
You can use more or less of these spices, depending on how hot you like your brownies. I unfortunately have to share with wimpy kids (spice-speaking), so this recipe is on the mild side, FYI.

Dark Chocolate Mexican Blender Brownies
Free from grain, gluten, dairy, and refined sugar.
Ingredients
Brownies:
- 4 eggs
- 3/4 c. cocoa powder
- 2 T. almond flour
- 1/2 c. honey
- 1/4 c. coconut oil
- 1 1/2 t. cinnamon
- 1/8 t. chili powder
- A few dashes of black pepper
Drizzle:
- 1/4 c. coconut oil
- 2 T. honey
- 1/3 c. cocoa powder
- Dash Himalayan salt
- 1/4 t. vanilla extract
Instructions
Preheat oven to 350 and grease an 8×8-inch baking dish.
Place all brownie ingredients in a blender (I use a Blendtec) and puree for a few seconds, until smooth.
Pour into prepared pan and bake for about 20 minutes, or until a toothpick comes out clean.
Cool completely before applying chocolate drizzle.

YUM!!! I am a big fan of all things Mexican! I just returned from extended vacation there.. and enjoyed the flavour pairings as always.. There are so many healing herbs/spices that can be added to cocoa / cacao and the results are SO delicious. These brownies will be on my ‘to make’ list as soon as I have unpacked! Can I use an egg substitute for some of the eggs? I often feel like paleo baked recipes are too “eggy”
I haven’t tried, but if you really need to reduce the eggs, I would use something like sweet potato. 🙂
