I’ll admit it. I’m not one to put too much stock in New Year’s goals or resolutions. I could probably count on one hand the years I’ve made them. And on no hands the years I’ve kept them. But one thing I try to do each and every new year is re-evaluate my food choices.  Two years ago that meant putting myself back on the GAPS Intro diet and actually sticking with the diet for the whole 1 1/2 to 2 years as recommended. It was hard, but worth it.  This year, my evaluation concluded that I need to eat more veggies. I’ve been getting a little carried away with the grain-free baked goods (chocolate muffins, anyone? or maybe some no-bake brownies?) and neglecting the goodness of vegetables.
