Warming and nutritious, this beef kale soup in the Instant Pot is a winner in my kitchen! The savory ingredients pared with the sweetness of coconut milk is delicious. And thereβs a touch of chili powder for an extra kick. It can fit into paleo, GAPS, keto, and Whole30 diets, too!

As soon as the weather starts cooling off in the fall, Iβm ready for all the soups. Now granted, down here in the south my family may not agree on that, but I donβt care. If itβs below 70F β out come the soups!Β
Admittedly, my relationship with soup hasnβt always been wonderful. But the GAPS diet forever instilled in my gut the goodness of soup.
Literally.
βCause soup is good for your gut. All that broth nourishes and heals! A good, homemade broth, whether itβs from beef, chicken, fish, or veggies, contains copious amounts of minerals and vitamins. All of these nutrients helpΒ boost your immune systemΒ and heal things like allergies and asthma. It can also help reduce inflammation, soothing arthritis.Β
A new favorite.
This beef & kale soup in the Instant Pot is my familyβs absolute favorite soup. To be honest, it came out of a day where Iβd forgotten to meal plan and thus was running around frazzled, throwing things into the Instant Pot.
And to be even more honest, a lot of days are like that. Life, yo.
I wasnβt holding my breath for compliments, but once the soup hit their tongues, everyone was asking me to save seconds for them! I call that a #momwin. π

I love serving soups to my family as a healthy way to nourish them! Though this beef & kale soup in the Instant Pot is one of our absolute favorite, here a few more soups we enjoy:

Beef & Kale Soup in the Instant Pot
This soup has a couple optional ingredients you can leave out according to your dietary needs. I stirred in a little tapioca starch to thicken it. This is not GAPS-friendly and can totally be left out, if you need. I also love to add in a lightly whisked fresh egg from my backyard chickens. Of course, if you canβt do eggs, you can leave that out, as well. With or without those two ingredients the soup will still be delicious.

Beef & Kale Soup in the Instant Pot
Free from grain, gluten, dairy, and sugar, with egg-free option.
Ingredients
- 1 pound organic/grass-fed ground beef
- 2-3 cups chopped organic kale (fresh or frozen)
- 1 onion, diced
- 3-4 tablespoons minced garlic
- 2 quarts chicken, beef, or veggie broth
- 2 tablespoons tapioca starch (optional, leave out for GAPS)
- 1/2 cup coconut milk (I use my homemade coconut milk)
- 1 fresh/organic egg, beaten (optional)
- 1/8 teaspoon chili powder
Instructions
Add the ground beef, onion, garlic, and broth to the Instant Pot. Stir around a little to break up the beef. Put on the lid, seal the vent, and press βmanual.β Push the β+/-β button to set the IP for 8 minutes.
When the Instant Pot is done, quick release the pressure.
In a small bowl/liquid measuring cup, whisk the tapioca starch into the coconut milk. Stir into the soup. If youβre not using the tapioca starch, just stir in the coconut milk.
Add remaining ingredients and serve.

I am new to the instant pot world! This sounds great. I do have one question though. Do you need to brown the beef on the saute option first? Or will the pressure cooking cook the beef? Thanks =)

Does tapioca starch thicken really quickly? Itβs weird to me to add it at the end if you arenβt planning on cooking it more. If I plan on using cornstarch instead (itβs what I have in the house) could I add it in the beginning with the beef and broth?
I really don’t know how adding cornstarch at the beginning would change things, since I’ve never done it. π I’m sure it wouldn’t ruin it, though! As for the tapioca, the heat from the soup is enough to thicken it. π
I’m on vacation without my instant pot, how would I make this on the stove?
I’d pretty much make it the same, just bring the broth to a boil, then reduce to a simmer until the beef is cooked. Turn off the heat, and add in kale and let it cook till it’s wilted. Finish the recipe the way it’s written in the instructions. π
