As soon as the weather starts cooling off in the fall, I’m ready for all the soups. Now granted, down here in the south my family may not agree on that, but I don’t care. If it’s below 70F – out come the soups! 

Admittedly, my relationship with soup hasn’t always been wonderful. But the GAPS diet forever instilled in my gut the goodness of soup.

Literally.

‘Cause soup is good for your gut. All that broth nourishes and heals! A good, homemade broth, whether it’s from beef, chicken, fish, or veggies, contains copious amounts of minerals and vitamins. All of these nutrients help boost your immune system and heal things like allergies and asthma. It can also help reduce inflammation, soothing arthritis.

A new favorite.

This Beef & Kale Soup in the Instant Pot is my family’s newest favorite. To be honest, it came out of a day where I’d forgotten to meal plan and thus was running around frazzled, throwing things into the Instant Pot.

And to be even more honest, a lot of days are like that. Life, yo.

I wasn’t holding my breath for compliments, but once the soup hit their tongues, everyone was asking me to save seconds for them! I call that a #momwin. 😉

This soup has a couple optional ingredients you can leave out according to your dietary needs. I stirred in a little tapioca starch to thicken it (not GAPS-friendly), and also added an egg from my backyard chickens. Those two things can totally be left out and the soup will still be delicious.

Beef & Kale Soup in the Instant Pot

Free from grain, gluten, dairy, and sugar, with egg-free option.

Ingredients

  • 1 pound organic/grass-fed ground beef
  • 2-3 c. chopped organic kale (fresh or frozen)
  • 1 onion, diced
  • 3-3 T. minced garlic
  • 2 quarts chicken, beef, or veggie broth
  • 2 T. tapioca starch (optional, leave out for GAPS)
  • 1/2 c. coconut milk (I use my homemade coconut milk)
  • 1 fresh/organic egg, beaten (optional)
  • 1/8 t. chili powder

Instructions

Add the ground beef, onion, garlic, and broth to the Instant Pot. Stir around a little to break up the beef. Put on the lid, seal the vent, and press ‘manual.’ Push the ‘+/-‘ button to set the IP for 8 minutes.

When the Instant Pot is done, quick release the pressure.

In a small bowl/liquid measuring cup, whisk the tapioca starch into the coconut milk. Stir into the soup. If you’re not using the tapioca starch, just stir in the coconut milk.

Add remaining ingredients and serve.
