Some of my favorite recipes aren’t really recipes. They’re just a few ingredients that I normally have on hand, thrown together in a dough, pot, whatever. While I usually have a ‘base’ for these ‘recipes,’ they’re easily modified to become something a little new.

Recipes like fat bombs, sauerkraut, and hot chocolate can all be tweaked with just a couple add-ins to give the final product a delicious twist.

And then there’s these easy cabbage steaks, too. There’s really only three ingredients you need: an oil, some salt, and of course cabbage. But you can sprinkle them with pepper or paprika to give them a little spice, some parsley or other herbs for a herby version, or even sprinkle them with parmesan or cheddar for a cheesy treat!

I usually just leave them plain, ’cause that’s the way I am. My family loves the cheesy version, though.

Cabbage has been shown to prevention of type 2 diabetes and cancer, and has over 30 different flavonoids and phenols, which contribute to its antioxidant capacities. It’s also rich in vitamins K and C, fiber, folate, and manganese, and a couple of the B vitamins (B1, B5, and B6).

3-Ingredient Cabbage Steaks

Free from grain, gluten, eggs, dairy, and sugar.

Instructions

Preheat the oven to 400 and grease a cookie sheet or line with silpat (I use these).

Wash cabbage and slice into 1/2-inch thick steaks (you can go thinner, if you like. Or if you’re really good at slicing cabbage.) Try to make all the steaks the same thickness, so they cook evenly.

Place cabbage steaks on the prepared pan. Brush with oil/fat and sprinkle with salt and whatever else you’d like.

Bake for 30-40 minutes, depending on how thick you sliced your cabbage steaks.
