Autumn love.
There’s no doubt about it. Fall is my favorite season of the year. Pretty much as soon as summer comes around, I’m wishing it were fall. Mostly because I love it when it’s not 100 degrees outside with 120% humidity, but also because I love the seasons changing.
I love the leaves turning colors on the trees (there are a few trees that do that down here in the south), I love the smell of the air as it starts to cool off, I love the harvest-time.
All the apple things.
One of the best harvests out there is no doubt apple harvest. My kids are kind-of apple fanatics and eat one a day… two if I let them. So when apple harvest time comes around each year, we try our best to head out to local orchards and be part of it.
And then we head home and make all the apple things. Smoothies, popsicles, “caramel” covered apples, and of course… apple pie. Last year I tried something new and stuck some apples in ice cream and it was an instant hit! With my husband at least, he didn’t save my kids any to try.

Probiotic Apple Pie Ice Cream
His taste testing went something like this:
In American Sign Language, because his mouth is full of ice cream: “O.M.G. This is… (bite of ice cream) This is seriously… (bite of ice cream) This is the next… (bite of ice cream) It’s like apple pie with ice cream! (bite of ice cream) And this is GAPS?”
Yes, friends, it’s that good. And it’s GAPS diet-ok, too! Can’t get much better than that, unless you’re dairy-free. I happen to be dairy-free, so I can’t enjoy it again, but my husband will have no problem polishing it off all by himself this time around.
Healthy and delicious.
If you can have dairy, you can enjoy this healthy and tasty treat, too. With kefir as a base, and honey as the sweetener, you’re practically eating a health food anyway. Kefir contains anywhere from 10 to 34 strains of probiotics and cultures on your counter in just 24 hours. This makes it healthier AND easier to make than yogurt.
Not that I don’t still make homemade yogurt, but kefir is a family favorite over here! And combined with the antibacterial, mineral-richness of honey, this probiotic apple pie ice cream is a double shot of healthy goodness!

Probiotic Apple Pie Ice Cream
Free from grain, gluten, and refined sugar.
Ingredients
For the ice cream:
- 2 cups milk kefir, strained of the whey (you can get a kefir starter here)
- 3 cups apples, peeled and chopped (I used Gala apples)
- 6 tablespoons honey
- 1 tablespoon vanilla (optional, I’ve linked to my favorite kind, or learn to make your own)
- dash Himalayan salt
- 2 egg yolks, from organic or free-range hens (totally optional, but helps make it creamier)
For the compote:

For the compote:
In a small saucepan place compote ingredients. Cover and simmer until apples are tender.
When apples are tender, remove from heat, stir in spices, and cool completely.
For the ice cream:
In blender (I use a Blendtec), puree the ice cream ingredients until smooth. Pour mixture into ice cream maker (I use a KitchenAid one!).
Process for about 20 minutes, or until fluffy.
Fold completely cooled apple compote into ice cream and pour into freezer-safe container.
Eat as is, or freeze for a couple hours for a firmer texture.
I’ve never heard of apple in ice cream but I am down for it! Plus it has added health benefits, count me in!

What do you do with the eggs? If you make a custard with the kefir milk it will not have live bacteria so how are you cooking the eggs the recipe does not say when to add them? Shame I bet it’s tasty, thought about a crumble ripple?
Ooh! Thanks for pointing that out, Claudia! The eggs go in the blender with the ice cream ingredients. You do not cook any of the ice cream ingredients, only the compote. 🙂 If you don’t like the idea of eating raw egg yolks you can totally leave them out. 🙂
