Whether it’s the heat of summer or smack dab in the middle of winter, I’m dreaming of all the delicious homemade ice creams and nice creams. I’ve been a fan of ice cream all my life. But once I became a mom I began realizing how utterly unhealthy all the ice creams I’d been enjoying actually were. They may taste delicious, but they’re full of refined sugars, unnecessary additives, and many times gluten!

Homemade for the win.

Avocado Mint Nice Cream.

Avocados. You guessed it, the main ingredient in this nice cream is avocados. Now, you might be like a few of my kids and wonder why on earth I would want to eat avocados at all, let alone sneak them in to desserts. Let me give you just a few reasons why you should be including avocados in your diet…

Two words: monounsaturated fats. I know, I know, fat is BAD… right? Wrong. While you want to stay away from saturated fats, monounsaturated fats are actually good for you! They help your heart and brain fight against diseases like heart disease, cancer, cognitive decline, and more. And avocados are packed with them! They’re also full of vitamins, too. Especially A, B, C, E, and K, as well as minerals like zinc, magnesium, potassium, iron and copper. To top it all off, avocados are packed with fiber, protein, and folate, which is crucial for preventing birth defects like spinal bifida and neural tube defects and is even said to prevent strokes!

Honey. The sweetener for this this avocado mint nice cream is honey. If you ever have to make a no-bake dessert, do your immune system a favor and use honey! It’s pretty much the only sweetener that is nutrient power house, packed with minerals, anti-viral, and anti-biotic properties. Plus it just tastes delicious….

Coconut oil. In this recipe the coconut oil helps give a nice creamy texture. You do not want it to be solid when you add it in, though. Otherwise you’ll end up with chunks of coconut oil in your nice cream! Make sure your coconut oil is nice and soft.

Mint. If you’re on the GAPS diet, you’ll want to use fresh mint leaves for this recipe. You can either chop them up well, or let the blender shred them. For anyone else making this recipe, a nice organic mint extract will work perfectly. And even though I do provide measurements for this ingredient, if you like things more minty feel free to measure with your heart.

Avocado Mint Nice Cream

Free from grain, gluten, eggs, dairy, and refined sugar.


  • 2 fresh, ripe avocados
  • 1/2 cup honey (raw and local is best!)
  • 1/2 cup coconut oil, softened
  • 2 tablespoons fresh mint leaves OR about 1/2 teaspoon peppermint extract (use leaves for GAPS Diet)


Place all ingredients in a blender (I use a Blendtec) and puree.

Transfer to a freezer-safe container and freeze until set (about 1-2 hours).


Alternatively, pour straight from blender to freezer-safe container and stir every 1/2 or so until set. It will not be as light as if you used an ice cream maker, but it will still be delicious!
