It might just barely be March out, but I’m already dreaming of all the delicious things that come with the warmer weather. Like homemade ice creams and nice creams.Â
I’ve been a fan of ice cream all my life. But once I became a mom I began realizing how utterly unhealthy all the ice creams I’d been enjoying actually were. They may taste delicious, but they’re full of refined sugars, unnecessary additives, and many times gluten!

Now, I’ve made some fun nice creams in my day, one of my favorites, being my 2-ingredient mango nice cream. But I love to find different and deliciously healthy ways to sneak avocados into foods, so I decided it was time to come up with a fun green version!

A nutrient-dense fruit.
Now, you might be like a few of my kids and wonder why on earth I would want to eat avocados at all, let alone sneak them in to desserts! Let me give you just a few reasons why you should be including avocados in your diet…
Monounsaturated fats. I know, I know, fat is BAD… right? Wrong. While you want to stay away from saturated fats, monounsaturated fats are actually good for you! They help your heart and brain fight against diseases like heart disease, cancer, cognitive decline, and more.
Vitamins. Avocados are actually full of vitamins, too! Especially A, B, C, E, and K, as well as minerals like zinc, magnesium, potassium, iron and copper.
To top it all off, avocados are packed with fiber, protein, and folate, which is crucial for preventing birth defects like spinal bifida and neural tube defects and is even said to prevent strokes!

4-Ingredient Avocado Mint Nice Cream
Free from grain, gluten, eggs, dairy, and refined sugar.
Ingredients
- 2 fresh, ripe avocados
- 1/2 cup honey (raw and local is best!)
- 1/2 cup coconut oil
- 2 tablespoons fresh mint leaves, or about 1/2 teaspoon peppermint extract (use leaves for GAPS Diet)
Instructions
Place all ingredients in a blender (I use a Blendtec) and puree.
Pour into an ice cream maker (I use this KitchenAid attachment) and churn for about 20 minutes.
Transfer to a freezer-safe container and freeze until set.
Notes
Alternatively, pour straight from blender to freezer-safe container and stir every 1/2 or so until set. It will not be as light as if you used an ice cream maker, but it will still be delicious!

I’m allergic to coconut. Any suggestions to replace the coconut oil??
You can use avocado oil, just note that the ice cream will be much softer. Still delicious, though!
