I don’t know about you, but diet and lifestyle changes have a way of introducing you to new and delicious foods. Foods that you might have thought you didn’t like. For me, one of those foods was zucchini.

Before switching to a real food, gluten free diet 6 years ago, I don’t think I’d ever tried zucchini, and I was sure I wouldn’t like it! But after a friend offered me some of her garden-fresh zucchini, I was hooked. It was so refreshing and sweet!

I had been missing out on so much! Not only is zucchini delicious, it’s full of vitamins A & C, antioxidants, beta-carotin, and potassium. It’s very versatile, too. You can eat it raw, steamed, baked, boiled, in breads, as pasta, and more!
