Celebrate summer year-round with these delicious grain-free Chipotle Lime Tuna Quinoa Wraps!
Not missing a thing.
There once was a time when I would swoon over a soft, fluffy wheat flour tortilla filled with chicken salad or veggies. And then gluten-intolerance happened. And I was sad. Gone were the days of my quick and easy wraps for lunch. How in the world could I enjoy them without the delicious tortillas?
One word. One glorious, curly-leaved word: Kale.
I know, I know, everyone and their mom is in love with kale and knows about it’s goodness. But seriously, it really has been a life-saver in so many ways! Not only does it go wonderfully in smoothies, salads, and soups, it’s the perfect wrap and/or bun replacement.
You could use romaine or iceberg lettuce, if you want, but I happen to also be intolerance to those leafy greens, so I try and eat them sparingly. And spinach just ain’t big enough.
Whatever way you roll, whole wheat wraps have nothin’ on kale wraps!
Growing up, my mom always made her own mayo. When I became a mom myself, I carried on the tradition. Homemade mayo became a staple in our fridge, and I was pretty happy with it, even though it’s pretty plain Jane.
Then one fateful day I saw Primal Kitchen’s mayo. Chipotle mayo.
Lemme tell you, friends, it’s delicious! Not only is their mayo free from unnecessary ingredients like sugar, soy, canola, it’s also made with cage-free organic eggs and vinegar from non-GMO beets! These are normal in my homemade mayo, but from a mayo you can buy? Sweet deal, yo.
I’m pretty sure I’m in love with their mayo, I can eat the plain stuff with a spoon. 😉
A family favorite.
My hubby is not as big of a mayo fan as I am, but when I placed a kale wrap filled with quinoa, tuna, and mixed with that delicious mayo, he was sold.
Two large wraps promptly disappeared before my eyes.
And then he asked for more.

Chipotle Lime Tuna Quinoa Wraps
Free of grain, gluten, eggs, and sugar, with dairy-free option.
- fresh kale leaves for wraps
- 2 c. cooked quinoa
- 1/3 c. plain mayonnaise
- 1 T. + chipotle lime mayonnaise
- 1 c. tuna in water
- 10 oz. shredded cheddar cheese
Place quinoa, mayos, tuna, and cheese (if using) in a medium-sized bowl and mix until combined.
Place 1/3-1/2 cupful of tuna salad in a kale leaf and devour.
