This easy, real food creamy potato salad is the perfect side dish to take along to your summer picnic, potluck, or BBQ! You can make it in the Instant Pot or on the stove-top easy peasy. Despite growing up in a family where potato salad was usually a big hit, and marrying a guy who loves it, I’ve never been a fan. However, over the past few years I’ve been trying to make myself ‘grow up’ and try re-try things I never enjoyed as a kid. And yep, potato salad was on that list!

Easy Creamy Potato Salad.

Though I’m also including instructions for making this creamy potato salad in a pot on the stove (like a normal person), I love to use my Instant Pot whenever possible. This happens to be one of those recipes where you can save a few minutes by using the Instant Pot. I use the Instant Pot Duo 6 quart 7-in-1. Not only do I appreciate not having to watch a pot boil, I appreciate not having to feel the heat from said pot escaping into my already-too-hot kitchen.

Potatoes. Red potatoes are what is traditionally used for potato salad, and that’s what I use for this recipe, too. They don’t fall apart the same as baking potatoes when you boil them and cool them. If you want to give it a try with a different kind, be my guest!

Sour cream. The use of sour cream for the “dressing” on this potato salad is what makes it extra creamy! And egg-free! It also gives this creamy potato salad a nice, mild flavor and ups the nutritional value.

White vinegar. In order to get that tang potato salad is known for, I add in a little big of white vinegar. Azure has nice organic white vinegar, but you can use whatever you like or have on hand.

Herbs & spices. It might be a potato salad without dill, but it wouldn’t be a good one. Though I only use a teaspoon here, feel free to add dill, garlic powder, and onion powder at your own discretion. There is no right or wrong answer if you like it!

If you’re not a huge potato salad fan, but you do like potatoes and sour cream, I encourage you to give this dish a try. I think it might just win you over, like it did me. At the very least, your family will love you for whipping up this creamy potato salad for them…

Easy Creamy Potato Salad

Free from grain, gluten, eggs, and sugar.


Optional garnish

  • chopped chives


Wash potatoes and chop them into bite-sized pieces. Place potatoes in the Instant Pot along with 1 cup water. (See note for stove-top instruction.)

Seal the vent, press ‘manual,’ and set the time for 4 minutes.

When it beeps, quick release the pressure.

Drain the potatoes and cool completely before finishing the recipe. You can stick them in the fridge to make it go faster, if you want.

Place cooled potatoes, along with remaining ingredients, in large bowl and mix until potatoes are evenly coated.

Store in the fridge.


To make on the stove, place potatoes in a large pot, cover with water, and bring to a boil. Boil until just fork-tender. You DON’T want them to mash when pierced with a fork!
