Smoothie on the brain.

It’s that time of year when smoothies are about all I want to eat. Well, other than chocolate cake, anyway, but that’s not really here nor there.

Anyway, I’ve been making up so many delicious smoothies lately, that I’m thinking of writing a little ebook devoted to them. Because I love them, and you should too. 😉

Besides my usual Peanut Butter Banana Smoothie, and various other fruit smoothies, I’ve been experimenting with carrot juice.

Me + carrot juice ≠ true love.

Now, carrot juice and I don’t have the best relationship. Not that I don’t love carrots. My family could probably live off them. We regularly buy 25 pound bags of organic juicing carrots at our local Publix. Yes, carrots I love –  carrot juice, not so much.

You see, I grew up in the house of a crunchy real foodie (yeah, before it was popular), and for my all natural punishment, my dear mother would have us drink freshly pressed carrot juice. 

Though I’m sure if you ask her it totally wasn’t a punishment.

Regardless, it set me and carrot juice off to a rather bad start. 😉

So I’ve been on the path to mend our broken relationship, because I know that carrot juice is full of wonderful vitamins and minerals, like vitamins A, C, K, B8, pantothenic acid, folate, potassium, iron, copper, and manganese.

Enter this Carrot Orange Smoothie. It helps.

Now, to make this gem, you can either throw a nice, organic, juicing carrot in the blender (I use my wonderful Blendtec for my homemade juices), along with an orange, puree, and then strain, or you can use some nice pre-made juice, like this one.

Add in a few other wonderful fruits like pineapple and bananas, and you’ve got a delicious drink on your hands! Or in your glass Mason jar, if you’re like me. 😉

Carrot Orange Smoothie

Free from gluten, grain, dairy, eggs, and sugar.

Ingredients

  • 1 cup carrot juice *
  • 1/2 cup orange juice *
  • 1 cup chopped pineapple
  • 1/2 cup applesauce
  • 2 overripe bananas
  • 1 teaspoon vanilla (I like to use my homemade extract)
  • 1 1/2 cup ice

Instructions

Put everything in a blender with the ice on top and puree until smooth!

Notes

I use fresh homemade carrot juice in my blender for this recipe (see the ‘Carrot Orange Smoothie’ header above for how-to). If your blender isn’t strong enough to juice carrots, you can either use a juice (like this one), or get yourself a better blender!
