I was never a fan of Mexican food growing up. Not only did I have a ton of food allergies, I was a pretty picky little kid, and my first meeting with refried beans (which you can read all about here) did not go over well. These factors plus my mom’s dislike for spicy food meant that I didn’t really have good Mexican food till college!
Then, one fateful day, I met Chipotle. Now I can’t get enough! Those burritos, overflowing with cilantro-lime rice (click here for my grain-free version!), perfectly seasoned steak, and delicious beans are my go-to date night with my hubby!
Unfortunately, eating gluten/grain-free makes burritos rather difficult. If you have this predicament, they’re easily served in a bowl. I like to enjoy them in a wrap of romaine lettuce, too! ‘Cause you can never have enough greens your your life, am I right? Plus romaine makes a perfect little wrapper for your burrito.
