Roasted potatoes and chicken is a family favorite meal at my house. It’s cheap, easy, and so delicious! Even though I have a pretty good sized family, combining organic drumsticks with potatoes is a great way to stretch a meal and keep the cost down. And to spice things up a bit, fennel is a great addition!
Fennel may not be the cheapest veggie, but a little bit goes a long way, so you don’t need a lot. It’s a wonderful accompaniment to the chicken and potatoes. Not only that, but it makes your kitchen smell amazing, too. 😉
Fabulous fennel.
Besides its delicate, sweet flavor and a wonderful licorice-y aroma, fennel boasts a wonderful array of nutrition as well! Fennel full of vitamin C, but it also contains the minerals potassium and folate, as well as the antioxidants like rutin, quercitin, and kaempferol. It also stimulates the digestive system, helps reduce intestinal inflammation, and aids our bodies in properly absorbing the nutrients from our food.
