Irish in the blood.
I have quite a bit of Irish blood in me. That being said, the most Irish my cooking usually gets is a pot of colcannon. If you’ve never heard of it, or tried it, I strongly suggest you check it out. Especially if you love mashed potatoes… and cabbage.
Branching out.
Since colcannon is as Irish as I get (I don’t count all the green things), this year I thought I’d branch out a little. Maybe make something that can be served as a main dish. Not that I don’t regularly serve sides as main dishes. ‘Cause let’s be honest, with five kids, and another on the way, I don’t really have time to make 3 course meals!

One of my favorite Irish dishes is shepherd’s pie. Filled with veggies and lamb (or ground beef), and topped with fluffy mashed ‘taters, it’s a hearty way to celebrate my Irish roots while still giving my family a nourishing meal.
