These gluten-free Chocolate Peanut Butter Swirl Brownies are wonderful combo of deliciously rich with a surprisingly healthy twist!
I’ve got chocolate on my mind.
In case you haven’t noticed, chocolate is a large part of my life. And I don’t mean Hershey’s candies or any such fluffy nonsense like that. I mean chocolate foods.
And I’m not a lightweight when it comes to chocolate foods, either. I like my chocolate like I like my… well… Let’s just say I like my chocolate dark and healthy. 😉
When I set about to make something chocolate, I try to make it as dark and healthy as possible, that way I can enjoy it for breakfast guilt-free. My one down-fall is chocolate chips, but I’m working on healthifying (and de-dairy-ing) them.
A Current favorite.
Another one of my current favs in food is buckwheat flour. I guess I shouldn’t say current, it’s been a favorite ever since my hearty Buckwheat Breakfast Brownie.Â
These Chocolate Peanut Butter Swirl Brownies are a sweeter, peanut butter filled sister to my delicious breakfast brownie. Since my dear hubby isn’t a fan of buckwheat if it’s not sweetened, and I wanted him to be able to enjoy it’s goodness, I decided these would be a good compromise.
All about buckwheat.
If you’re not familiar with buckwheat, let me give you a few stats on it. First of all, it’s not wheat, so don’t freak out on me! Buckwheat is actually not even a grain, it’s a fruit seed related to rhubarb and sorrel, and is a healthy grain-alternative for those of us who like to limit our grains.Â
Nutritionally speaking, buckwheat is high in minerals manganese, copper, and magnesium, and also contains vitamins niacin and riboflavin. It also has wonderful proportions of almost all of the essential amino acids, especially lysine and tryptophan.
Chocolate Peanut Butter Swirl Brownies
I know a 3-year old girl in a toy army helmet probably doesn’t fit a post about brownies, but my little sous chef is too cute waiting for her treat to cool off that I couldn’t resist including her… 😉
If you’ve been looking for a tasty way to introduce buckwheat to your diet, let me suggest these Chocolate Peanut Butter Swirl Brownies. 🙂 Buckwheat has a strong flavor by itself (I personally love it, but some don’t), and since these treats pair that heartiness with cocoa, peanut butter, and honey, they’re a sweet way to start of your journey to buckwheat love.Â

Thank you, Lela!
These look absolutely DELICIOUS!- but we’re
dairy-free here and I wondered if I could substitute the sour cream and milk with coconut milk? Has anyone else attempted a dairy-free version of this? (I’m a little nervous to waste the ingredients if it doesn’t work
You can definitely sub out the milk for coconut milk, and you can use coconut cream or coconut milk yogurt for the sour cream. 🙂
These remind me of the brownies that my mom used to always make except my kid can eat them because they are GF- love it!
I’m so glad they’re a treat your son can enjoy, Sara!
