Sometimes it’s because I’m just too exhausted from life to even think about spending time in the kitchen, standing, mixing, dirtying dishes, cleaning dishes, etc., just to have my kids inhale my hard work in a matter of seconds. And sometimes my lack of inspiration comes from the fact that I actually don’t like what I’m baking.

Yes, you read that right. I don’t like cupcakes. I can count on one hand the times I’ve made them, and probably on one finger the times I’ve enjoyed eating them. 

Recently I received a nice package of gluten-free goodies from fellow blogger Gluten-Free Mama. It was full of her delicious flour blends, a yummy pumpkin bread mix, and yep, you guessed it, a cupcake mix

Then one afternoon I was perusing Pinterest. I stumbled across these delicious-looking Pumpkin Spice Donut Holes from Making It Milk Free. Made with a muffin mix, of all things!

Now, I’m no alchemist, but I figured if she could use a muffin mix, then I could use a cupcake mix

And I was correct.

Cheater Red Velvet Donuts

  1. 1-15 oz. red velvet cupcake mix (I used Heartland Gourmet's mix)
  2. 1 c. unsweetened applesauce
  3. 1/4 c. milk or water
  1. In large bowl, combine applesauce and milk/water.
  2. Stir in cupcake mix.
  3. Bake 1/4 cupfuls of batter in preheated donut maker (I used this one) for 12-15 minutes.
  4. Let cool, then drizzle with melted chocolate.
