After scouring the internet (not really, I try not to scour anything) I found this simple recipe and thought I’d give it a try. A few tweaks later, it was a hit! My family, self included, gobbled up the crackers. 😉 They now regularly ask for them, and I don’t mind obliging.

Buttermilk Rice Crackers
Free of gluten, eggs, and refined sugar, with dairy-free option.

Ingredients
  1. 2 c. brown rice flour
  2. 1 c. starch (I use tapioca)
  3. 1 t. salt
  4. 1/2 t. baking soda
  5. 1 c. milk of choice (either whole milk or coconut milk will work)
  6. 1 T. apple cider vinegar
  7. 1/2 c. flax meal
  8. 1/4 c. olive oil
  9. 2 T. honey
Instructions
  1. Preheat oven to 400.
  2. Whisk together dry ingredients, except flax meal, in a large bowl. Set aside.
  3. In liquid measuring cup, combine milk and vinegar. Let curdle for about 5 minutes.
  4. Stir in flax meal and let soak for another few minutes.
  5. Stir in oil and honey.
  6. Pour liquid ingredients into dry ones and mix until a ball forms.
  7. Knead to form a smooth dough.
  8. Divide dough in half and place on two lightly greased cookie sheets.
  9. Roll out thinly and cut into squares with a pizza cutter or knife.
  10. Prick all over with a fork, and sprinkle with extra salt.
  11. Bake for 20-30 minutes, or until crispy on the edges.
