I’m all about easy when it comes to the kitchen. From breakfast to dinner, I try to spend as little time prepping meals as possible. With 6 kiddos running around, plus homeschooling, gardening, chicken-wrangling, and the work that goes into this blog, I don’t have a lot of spare time to spend making complicated recipes.Â
But that’s just the way being a mom goes, isn’t it? And of course I wouldn’t trade it for all the time I could spend baking elaborate gourmet dishes! I’d much rather be wrangling kiddos.

When I first published these Banana Coconut Cookies 2 years ago, I was just sharing my latest easy treat with you all. But they quickly became one of the most popular recipes on my site! And with good reason. With only four ingredients, and two of them optional, these little cookies are about as easy as you can get.Â

Hi thank you for sharing this recipe. They are our families new favorite. I didn’t have walnuts or raisins so used raw cashews and dried cranberries instead , they are super yummy?

Hi can u suggest any other substitute for banana in this recipe ? I know it may be difficult. .but my child and me are not fond of banana flavour
Well, I honestly haven’t tried anything else, but I suppose my first choice would be squash (pumpkin or butternut) or sweet potato.
A couple things seem wrong here. First, 2 tablespoons of dough per cookie only makes 6, so I guess it should be 2 teaspoons. Second, something must be wrong with either the temperature or the time, because 15 minutes at 350 doesn’t come close to browning them like in your pictures, just pure white. I’m not sure if I should use higher temp or more time. But they taste very very good. Thank you!
Ok, so I apologize, but I don’t usually measure how much ‘dough’ I use per cookie. 😉 I just kinda wing it. If you literally use two tablespoons and your cookies are rather large, then it would take them longer to cook. So you could either cook them longer (I wouldn’t recommend changing the oven temp), or make them smaller. 🙂 Hope that helps! Thanks for giving them a try!
